    Simple Broccoli Soup - NotEnoughCinnamon.com

I am not a broccoli person. I even used to hate broccoli - and now I'm ok with it. But you guys, this broccoli soup is OUTSTANDING. Like gimme-some-more-right-now outstanding. I'm not sure why, but you just can't taste this little bitter taste that I hate  don't like in broccoli (and cauliflower and Brussel sprouts and cabbage for that matter). Broccoli-haters: you know what I'm talking about. For you - people that I don't really get and who just love it: all you need to know is that this soup is another glorious way to eat your favorite veggie.

For some reason, I keep coming back to broccoli. Or it keeps coming back to me... Whatever. I mean, why did I try to come up with a broccoli soup in the first place, if I don't even like broccoli? Something's wrong with me. I'm sure glad I did though because this soup meets all my yummy-soup criteria : it's creamy but there's not a single dollop of cream in it, it's tasty but super easy to make and it's comforting for all the reasons previously mentioned. One last detail! I've heard it's been freezing cold in some parts of the US, so obviously this soup is the best thing that can happen to you right now; and for you Australian folks: it's delicious eaten cold!

I only like broccoli when I eat it at a chinese restaurant, but I will have to take your word on it about this soup and try it. It is certainly healthy and I always like to have at least one soup in the fridge in the winter.

I know, it's crazy, right? I was very surprised too. Turns out broccoli is pretty high in carbs! But healthy ones 🙂 You can check out this link for more nutritional info about broccoli: http://ndb.nal.usda.gov/ndb/foods/show/2920

I too am finding the nutritional info confusing. What I found was for 1 c of chopped broccoli, there are 31 calories, 6 carbs, 2 fiber and 2 sugar. Something keep in mind about carbs in food, you need to subtract the fiber for actual carb count as the fiber is not digested so in the case of 1 c. of ch. broccoli there is actually 4 carbs. Pretty nice.

should have added that the chicken broth is quite high in carbs, 18 per 2/3 cup. That is most likely where all the carbs are since there are only 2 carbs in 1 Tbl. of shallots

This is so good! I love that it is so easy and fast! Although I must admit it almost didn't make it to the blender, it smelled so good I wanted to eat it right away. The only change I made was vegetable broth instead of chicken because I don't eat meat. I am definitely keeping this recipe. Thank you so much for sharing 🙂 <3

This isn't vegan but could be if you substitute olive oil for butter and veggie broth for chicken. Which I did and it tastes amazing.

So simple and tasty. I added a little nutmeg and siracha sauce for an added flavor.

I have hated broccoli forever but after this recipe I can have it every day!
I didn't have ginger and used red onions instead of shallots, a little bit of salt at the end and the results were amazing!

      Thanks for during this!!

I use red onion instead of shallot and add celery stalk. Turned out delicious as well. Thanks for this.
