    In this recipe, I'll show you how to make the best pesto without pine nuts using my recipe for Basil & Sun-Dried Tomatoes Pesto.

    This easy pesto recipe made in a food processor is a must-try for fans of Italian Cuisine! So quick to make, versatile and absolutely bursting with the Mediterranean flavors of basil, parmesan, tomatoes and garlic.

    Last weekend, I finally bought myself a beautiful KitchenAid food processor. Or should I say, my mom offered me a beautiful food processor! Isn't she sweet? Thanks, Mom 🙂 (that's a pic of my mum and me when she visited us in Sydney last month!)

    I have wanted a food processor since the first day we moved to Australia. But because we were supposed to stay only one year, it wasn't really worth it. Travelling with a food processor in your luggage? No, thanks.

    Now that we'll probably stay a bit longer, it is definitely something that was missing from my kitchen. Like one of my Facebook followers said: "you'll wonder how you ever lived without it". And that's true.  I wonder if there's one thing this appliance can't do. I've been playing with it a lot this week and so far I totally LOVE it.

    The first thing I made with my food processor was this easy Basil and Sun-Dried Tomatoes Pesto. I had two bunches of fresh basil sitting in my fridge so that's the first thing that came to my mind. 'cause you know how I love homemade pesto, right?

    Only this time, I decided to tweak my pesto recipe it a little bit and added sun-dried tomatoes to the mix. Sun-Dried Tomatoes Pasta, you guys!

    Now I know the color of this Basil and Sund-Dried Tomatoes Pesto isn't really flattering but guys, it's the most delicious pesto. Use it as a pesto sauce for pasta or make a big batch in your food processor and cook some of my recipes with pesto like these Paleo Meatballs or my Green Beans with Pesto.

    Basil and Sun-Dried Tomatoes Pesto

    Ingredients

    • 2 bunches fresh basil
    • ½ garlic clove peeled and roughly chopped
    • 2 tbsp grated Parmesan
    • 1 tsp salt
    • 4 tbsp olive oil
    • ⅓ cup sun-dried tomatoes -about 8 pieces I used the one packed in oil

    Instructions

    1. Add basil leaves, garlic, parmesan and salt in the bowl of your food processor. Process and gradually add olive oil. Add sun-dried tomatoes and keep processing until you obtain the desired consistency.

    2. Scrape the sides of the bowl regularly if needed.

    Recipe Notes

    Leave out parmesan for a paleo-friendly pesto.

      I think sun-dried tomatoes would be a nice addition to pesto. Really looking forward to seeing what you are using it in.

      I love that this pesto recipe comes without pine nuts! Where I live, they are suuuper pricey! Your recipe sounds delish and I love that pic of you and your mom!
