Smoothie bowls - remember when the smoothie bowl took over Instagram? Scrolling through smoothie bowls of Instagram, I have to admit that they are truly works of food art! And what can I say, they make my world go round!
Remember when smoothies used to be a sugar-packed grocery store snack made with fake fruit juices? I would say that smoothies have definitely come a long way since those days!
I mean, smoothies are such an easy way to pack a whole bunch of nutrients into one glass! I have a whole bunch of smoothie recipes on NEC. However, if you want to make it a meal - make it a bowl and if you want to make ONE smoothie bowl this fall, make it an Apple Pie Smoothie Bowl.
While smoothie bowls are more popular during sunny, warm-weather months, I really wanted to give you guys a more fall-centric option so that you can have your smoothie bowl fix AND feel all cozy.
This decadent fall-tastic vegan breakfast bowl has all the comfort of homemade apple pie paired with the freshness and fun factor of smoothie bowls.
Cinnamon, almond butter, oats, banana, and applesauce make up the base, and then we go crazy with the toppings adding crunchy granola, fruit, and a drizzle of almond butter. It’s very creamy and thanks to the toppings, it tastes like a cross between an apple crisp and pie.
What is the point of a smoothie bowl anyway?
Good question! I am glad you asked! Apart from being pretty, Smoothie Bowls have some serious redeeming qualities. First, they contain more fruit and less liquid, which makes for a more filling meal replacement!
Think of a smoothie bowl as a smoothie turned into a meal! Owing to their thick texture, smoothie bowls are designed for being loaded with all kinds of delicious toppings! In summer, I like to go heavy on the berries and coconut but the dense consistency of this apple pie smoothie bowl also holds up to all my favorite fall treats like nuts and granola! The toppings add crunch and texture while providing energy, healthy fats, and protein to keep you full throughout the day.
Ingredients for making Apple Pie Smoothie Bowl:
- 1 small banana, roughly sliced and frozen (or ½ large banana)
- rolled or quick oats for creaminess, extra thickness, and a boost of antioxidants and fiber! It does not matter which ones but quick oats blend quicker. Duh, right?
- unsweetened applesauce puts the apple in the apple pie smoothie bowl! I love using applesauce in smoothie recipes rather than apples because the smoothie bowl turns out so smooth rather than grainy.
- cinnamon - because of no apple pie without cinnamon right? You can also use apple pie spice.
- I like adding natural almond butter to up the creaminess but for a nut-free smoothie bowl, any seed butter will work.
- To lighten the mix and facilitate blending, I like to add some almond milk but you can use your favorite nut milk.
- protein powder is an optional addition but I like to sneak in some protein whenever I can to make my snacks more filling. I typically use Vital's Protein collagen powder - if using another kind, use vanilla or plain
How to make Apple Pie Smoothie Bowls:
Combine all the smoothie ingredients in a blender and process until super smooth (make sure the oats are not longer grainy).
Pour in a bowl and top with your favorite topping. Serve immediately.
Toppings
- granola (click for my homemade apple pie granola recipe)
- apple chunks
- almond butter drizzle (I recommend almond butter here - it’s milder than peanut butter)
- ground cinnamon
- chia and hemp hearts
- coconut yogurt
Tips:
- For a no-banana version, or to lower the sugar: replace half or all the banana with steamed and frozen cauliflower (about 1 cup)
- The consistency should be pourable but thick – thick enough to be eaten with a spoon. Add a splash of milk as needed to reach the perfect consistency.
- If you prefer a normal drinkable smoothie (vs a bowl), add a bit more milk.
- I used my Homemade Apple Pie Granola for the main topping in this recipe. I always have a batch of this around because it’s so versatile and it makes the best fall breakfast.
