    This easy One Pan Chicken Dinner is the perfect recipe for busy weeknights. Juicy BBQ-Spiced Chicken Thighs on a bed of maple roasted sweet potatoes, potatoes and apples, with little savory bits of bacon in every bite!

    Chicken thighs rubbed with homemade BBQ spice, baked with a mix of sweet potatoes, potatoes, a little bit of apple and bacon, and a touch of maple syrup... I just had this for lunch but I'm seriously tempted to go for seconds just typing these words!

    But then I would be too full, would need to take a nap and... I need to study and get some work done this afternoon. So let's try to focus here! (but seriously, how delicious does this One Pan Chicken Dinner look?!)

    This Easy One Pan Chicken Dinner is perfect for a weeknight meal:

    The recipe could not be any easier! You'll get the prep done in 15 minutes or less and then, your oven does all the work.

    And best of all: you only need one single pan. Fewer dishes to do = one million bonus points. Most of you probably have a dish-washer but... I don't.

    Except if you can count your husband as a dish-washer, but I'm not sure he qualifies. So, yeah, definitely a big selling point.

    I love cooking with chicken thighs because it combines the best things about white and dark meat: it's juicy and flavourful but not as fatty as, say, drumsticks.

    If you usually don't like dark meat, give this One Pan Chicken Dinner with bbq spiced chicken thighs a try and you might change your mind!

    One Pan BBQ Spice Chicken Dinner

    This easy One Pan Chicken Dinner is the perfect recipe for busy weeknights. Juicy BBQ Spiced Chicken Thighs on a bed of maple roasted sweet potatoes, potatoes and apples, with little savory bits of bacon in every bite!

    Ingredients

    • 2 medium sweet potatoes skin on, cut into small cubes
    • 3 medium potatoes skin on, cut into small cubes
    • 1 apple skin on, cut into medium cubes
    • 2.5 oz center-cut bacon 70 g, chopped
    • 1 tbsp pure maple syrup
    • 1 pinch salt
    • 2 tbsp BBQ Spice Rub
    • 1 tbsp olive oil
    • 10 chicken thighs boneless and skinless
    • Flat leaves parsley to serve

    Instructions

    1. Preheat oven to 360F / 180C.
    2. In a large baking dish, add sweet potatoes, potatoes, apple, bacon, maple syrup and a pinch of salt. Toss to combine (it's easier to use your hands).
    3. In a medium bowl, stir together BBQ spice and olive oil to form a paste. Add chicken tights and toss until all sides of the tights are covered. Arrange upside-down over potatoes in baking dish.
    4. Bake for 20 minutes. Remove from the oven, stir the potatoes and flip chicken. Bake for another 25 minutes or until chicken is cooked through.
    5. Top with a few parsley leaves and serve with a salad on the side.

      Would I be able to use chicken drum sticks instead? If so what temperature?

        Hi Elise, it should work with drumsticks too yes. I think the temperature and cooking time would be similar.

      The pics of those BBQ spiced chicken thighs make me drool and the sound of those maple roasted veggies with BACON??? Don't even get me started! This is an amazing weeknight dinner!
