Chicken thighs rubbed with homemade BBQ spice, baked with a mix of sweet potatoes, potatoes, a little bit of apple and bacon, and a touch of maple syrup… I just had this for lunch but I’m seriously tempted to go for seconds just typing these words!

But then I would be too full, would need to take a nap and… I need to study and get some work done this afternoon. So let’s try to focus here! (but seriously, how delicious does this One Pan Chicken Dinner look?!)

This Easy One Pan Chicken Dinner is perfect for a weeknight meal:

The recipe could not be any easier! You’ll get the prep done in 15 minutes or less and then, your oven does all the work.

And best of all: you only need one single pan. Fewer dishes to do = one million bonus points. Most of you probably have a dish-washer but… I don’t.

Except if you can count your husband as a dish-washer, but I’m not sure he qualifies. So, yeah, definitely a big selling point.

I love cooking with chicken thighs because it combines the best things about white and dark meat: it’s juicy and flavourful but not as fatty as, say, drumsticks.

If you usually don’t like dark meat, give this One Pan Chicken Dinner with bbq spiced chicken thighs a try and you might change your mind!

Enjoy! 🙂
