    Mango-Strawberry Yogurt Parfaits

    You like strawberries, right? And you also like mangoes, right? Yes, I'm sure you do! Then you're going to love today's recipe. How can I can put this? Mango + strawberry is like the best fruit combination you could think of. Yes, I did say last week that I loved bananas to the point that I don't feel good if there's no more left in the house. Nothing has changed, I still love bananas and I still eat one every single day. I also love raspberries and cherries. It takes me literally 5 minutes to gobble up a whole bag of cherries. See? I don't discriminate any fruit. I'm not that kind of person. But guys, the mango-strawberry combo is glorious.

    Mango-Strawberry Yogurt Parfaits

    Obviously the parfait thing with yogurt and almond is just an excuse. I would feel ashamed to post a recipe for some simple stewed mango and strawberries, made with just a hint of honey. But now that I've talked about it anyway, you should try it. Nothing really creative here, but gosh it's really good! But I'm not done here. Wait until summer and this amazing mango-strawberry crisp I have for you and you'll understand what the fuss is all about. I came up with the recipe last summer but before I had time to share it with you, strawberry season was already over. I know, sad.

    Speaking of season, I figured since Spring is around the corner for you (I'm saying 'you' because, actually, fall is around my corner...), you might be able to find good strawberries at a decent price...? I'm crossing my fingers! If you don't, then bookmark this recipe, pin it, save it, print it and make it later when you can find some!

    Mango-Strawberry Yogurt Parfaits

    Ingredients

    • 1 cup strawberries hulled and cubed
    • ¾ cup mango peeled and cubed
    • 2 tsp honey or maple syrup
    • ½ cup fat free plain Greek yogurt
    • 2 tsp slivered almonds

    Instructions

    1. In a bowl, combine strawberries, mango and honey.
    2. Prepare two serving glasses. Using a spoon, layer ⅓ cup fruit mixture then ¼ cup yogurt and again ⅓ cup fruit mixture in each glass. Sprinkle with slivered almonds and serve immediately.

    Recipe Notes

    If you have fruits leftovers, eat them by the spoonful. You totally deserve it.

      This would make a wonderful snack. Or dessert. Adding a hint of vanilla would probably be nice, too.
