This mug of hot chai almond milk is so comforting that you'll be wishing for a rainy day or a snow storm! Not that you have to wait for these exact weather conditions but it's pouring rain as I'm writing this and I'm telling you, it could go on for hours and I wouldn't care. That's what my hot drink does to me (kinda sounds like a love song huh?).
Also, it's ridiculously easy to make and only lightly sweetened with maple syrup – which obviously strengthens my love even more. I'm honestly not sure I'm legally allowed to call this a "recipe" because besides placing all the ingredients in a pot and simmering for 15 minutes, well... there's not much you need to do. And then...it's the holidays, and everything you love about winter, directly in your mouth. Soul warming, I'm telling you!
Hot Chai Almond Milk {Vegan}
Ingredients
- 2 cups / 500 ml unsweetened almond milk
- 2 cinnamon sticks
- 5 whole cloves
- 3 cardamom pods
- A small piece of fresh ginger sliced (or ⅛ tsp ground ginger)
- 1 star anise optional
- 1 tbsp maple syrup more or less to taste - optional
- ground cinnamon to serve
Instructions

Place almond milk, cinnamon, cloves, cardamom, ginger, star anise (if using) and maple syrup in a medium saucepan over medium heat.

Cook for 15 minutes. Remove from the heat and strain.

Divide between mugs, add more maple syrup if needed and sprinkle with ground cinnamon to serve.
Recipe Notes
To make a chai latte, place a bag a black tea in each mug, pour hot drained almond milk and steep for a few minutes to your liking.
