Grilled Chicken with Peach Mango Salsa

Ingredients

For the salsa

  • 1 cup peach ripe but still firm, peeled and cubed (about 2 peaches)
  • 1 cup mango ripe but still firm, peeled and cubed (about 1 small mango)
  • 1 lime
  • 1 1/2 tbsp red onion finely chopped
  • 1/4 tsp red pepper flakes
  • 1 tbsp fresh cilantro chopped
  • pinch salt

For the chicken

  • 4 small skinless boneless chicken breasts about 5 oz / 140 grams each
  • sea salt and freshly cracked pepper to taste
  • Olive oil spray

Instructions

  1. Prepare the salsa. Combine all the ingredients in a medium bowl and toss gently. Set aside.
  2. Heat a grill pan (I use one similar to this one) over high heat.  Season the chicken with salt and pepper. When hot, spray lightly with olive oil and brown chicken, about 3 minutes on each side. 
  3. Reduce heat to medium and cook for an additional 2-4 minutes per side, or until chicken is cooked through (but still moist and juicy!). Transfer chicken on a cutting board, and using a fork to hold the chicken, slice it. Place cut chicken breasts on plates and top with salsa. Serve immediately.

Recipe Notes
