As I’m writing this post for Asian Beef Noodles, I can’t help but think of one thing only: Noodles. Not really surprising since I’m sharing an Asian Beef Noodles recipes, you think.
Well, I’m actually not thinking about the noodles you eat. I’m more thinking about the movie character Noodles from Once Upon a Time in America. I guess listening to the soundtrack from Ennio Morricone is not helping.
Have you seen this movie? It’s directed by Sergio Leone and starring, among others, Robert De Niro (playing...Noodles). I’m not good at summarizing a movie (especially when it lasts more than 4 hours - 256 minutes to be precise) so here is what wiki says about it:
the movie chronicles the lives of Jewish ghetto youths who rise to prominence in NYC’s world of organized crime. The film explores themes of childhood friendships, love, lust, greed, betrayal, loss broken relationships and the rise of mobsters in American society. Bottom line is, this movie is amazing, especially the first part when they're kids!
So I have an idea for you. Why not rent/borrow/stream "Once Upon in America" this weekend and make yourself a Double Noodles Night? These Asian Beef Noodles (the ones you eat, this time) are highly suitable for a cozy night in. I may or may not have done that before.

Asian Beef Noodles
Whip up these Asian Beef Noodles within 20 minutes to get your Asian Take-Out fix. Chopped onions and lean ground beef, stir-fried with a delicious sweet and spicy sauce and tossed with Instant Noodles is all you need to make an affordable and quick dinner for the family
Ingredients
For the sauce
- ¼ cup rice wine vinegar
- ⅓ cup light soy sauce
- 1 tsp sriracha hot sauce the one with a rooster
- 2 tsp sugar or honey or agave
For the beef
- Cooking spray
- 1 lb extra lean ground beef
- 1 large onion sliced (about 1 ½ cup)
- salt and pepper to taste
- 8 oz Instant Noodles 99% fat free
Instructions
For the sauce:

In a bowl, combine rice vinegar, soy sauce and sriracha. Add sugar and mix well until it’s totally dissolved. Set aside.

Fill a large pot with water and bring it to a boil.
For the beef:

Meanwhile, heat a nonstick skillet over medium heat. When hot, spray with cooking spray, add onion and cook for about 3 minutes, stirring constantly to make sure the onion doesn’t burn.

Add ground beef and break it into tiny pieces as you fry it. Brown the beef for about 2 minutes (don’t overcook the meat, it would be dry).

While the beef is cooking, add the Instant Noodles to the boiling water and cook for 2 minutes (more or less according to package instructions).

Drain noodles and put them back in the pot (away from heat). Drain excess liquid from the beef and onion mixture and transfer to noodles’ pot.

Pour the sauce into the pan and mix well to combine beef, noodles and sauce. Make sure noodles are fully covered.

Garnish with parsley or cilantro and serve immediately.
Recipe Notes
If you want to make this for 2, 6 or...only yourself, it’s easy! Just follow those proportions for the sauce. Here is the quantity for one person only: 1 tbsp rice vinegar, 1.5 tbsp soy sauce, ¼ tsp sriracha and ½ tsp sugar. Adjust the meat, onion and noodles quantity and you’re good to go!

Just tried this tonight and it was great! I didn't have noodles so just served it over Haiga rice. Very simple, very tasty!
