    Smoked Salmon Potato Salad with a Creamy Dill Dressing

    Smoked Salmon Potato Salad with a Creamy Dill Dressing

    This elegant Smoked Salmon Potato Salad studded with red onions and capers can be served as a starter or a main, and is perfect for a picnic, too.     This summer when we were in Auvergne, France, our hostess Beatrice made us a very good potato salad with fresh dill. It inspired me to create my own Smoked Salmon Potato Salad with a Creamy Dill Dressing, substituting and adding some ingredients.

    I kept the idea of fresh dill in my Smoked Salmon Potato Salad as it compliments the potatoes and salmon so well. The addition of smoked salmon really takes this simple potato salad to the next level and makes it suitable as a main dish, perfect for a lunch or a get-together.

    As a further adaption, I added capers and made a light Creamy Dill Dressing. While our hostess Beatrice used heavy cream, I used a combo of half-and-half and fat-free plain Greek yogurt, along with some Dijon mustard and lemon.

    The result is a super yummy Smoked Salmon Potato Salad, very satisfying, fresh and easy to make!

    Smoked Salmon Potato Salad with a Creamy Dill Dressing

    Ingredients

    For the salad

    • 2 lb potatoes like Red-Skinned or Russet, washed
    • 1 tsp salt
    • 1 medium red onion sliced
    • 4 slices smoked salmon about 5 oz, cut into strips
    • 1 tbsp capers optional

    For the dressing

    • ¼ cup half and half
    • ½ cup fat-free plain Greek-style yogurt
    • 1 tsp Dijon mustard
    • 1 tbsp lemon juice
    • 1 tbsp fresh dill chopped

    Instructions

    1. Cook the potatoes. Peel the potatoes if needed (I prefer to leave the skin on), cut them into 1-inch pieces and rinse them. Place potatoes in a large pan, cover with water, add salt and cook on high heat. Bring the water to a boil and cook for 10 minutes. Drain the potatoes in a colander and let cool completely.
    2. Make the dressing. While potatoes are cooling down, in a small bowl, combine half and half, yogurt, mustard, lemon juice, and fresh dill. Mix well and keep in the fridge.
    3. Make the salad.  In a salad bowl, mix potatoes, onion, capers and smoked salmon together.
    4. When ready to eat, pour dressing on the potato salad, and mix well to coat. Best served chilled.

    Recipe Notes

    If you want to make this salad ahead, prepare the dressing on the side and add it at the last moment.

      Hello Marie! I really enjoyed making this dish, even without the smoked salmon (my guy ate it, GRRRR....!) Last night, I was in such a hurry to eat it after I made it and at first I wasn't too thrilled about it. But when I woke up a short while ago and tasted it...WOW! It is so flavorful and delicious! I will definitely make this again. And I am in the process of trying some of your other recipes! This is going to be an exciting day! Thanks!

      This potato salad looks amazing! I bet it tastes absolutely gorgeous, with those capers, red onions and the addition of fresh dill!
