¼cupgolden raisins soaked in 2 tbsp marsalaor water
2tbswalnutslightly toasted and roughly chopped
1tsplemon zest
1tsporange zest
½cuporange juice
1lemonjuiced
1tspground cinnamon
½tspground ginger
8medium Granny Smith applescored
Instructions
Preheat the oven at 350F.
Heat the cider and honey together in a pan until syrupy.
Meanwhile, combine dates, sultanas, walnuts and zests in a bowl. In another bowl, combine orange juice, lemon juice, cinnamon and ginger.
Slice the apples in even slices through the diameter (crossways). Dip each slice into the orange juice mix, stack each slice on top of each other, and repeat with each apple.
Carefully spoon in the stuffing into the center and drizzle with syrup and remaining orange juice mix.
Bake for 40 to 60 minutes, basting occasionally until tender.
Remove from the oven, drizzle with a bit of honey (optional) and serve with vanilla ice cream.
