No Bake Cranberry Pumpkin Spice Snack Bars {Paleo, Vegan and Gluten Free}

  • 1 1/2 cup almonds chopped
  • 1/2 cup almond flour
  • 1/2 cup pumpkin seeds
  • 1/3 cup flax meal
  • 3/4 cup unsweetened desiccated coconut
  • 1/3 cup dried cranberries
  • 1/2 cup almond butter or your favorite nut or seed butter
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla
  • 3 tablespoons maple syrup
  • 1/2 teaspoon sea salt
  • 1 1/4 teaspoons pumpkin spice


  1. In a large mixing bowl, mix all ingredients together until well combined. Add to a 9x9 baking dish and freeze for 1 hour or until set. Cut into 12 bars and store in the freezer in an airtight container.
