No Bake Cranberry Pumpkin Spice Snack Bars {Paleo, Vegan and Gluten Free}
Naturally sweetened and packed with nutritious ingredients, these healthy snack bars with cranberries and pumpkin spice are the best choice for midday snacking! They're also paleo, vegan & gluten-free!
Ingredients
- 1 ½ cup almonds chopped
- ½ cup almond flour
- ½ cup pumpkin seeds
- ⅓ cup flax meal
- ¾ cup unsweetened desiccated coconut
- ⅓ cup dried cranberries
- ½ cup almond butter or your favorite nut or seed butter
- ½ cup coconut oil
- 1 teaspoon vanilla
- 3 tablespoons maple syrup
- ½ teaspoon sea salt
- 1 ¼ teaspoons pumpkin spice
Instructions

In a large mixing bowl, mix all ingredients together until well combined. Add to a 9x9 baking dish and freeze for 1 hour or until set. Cut into 12 bars and store in the freezer in an airtight container.
