One bowl and one baking dish are all you need to make these healthy snack bars with cranberries and pumpkin spice. No oven needed, these homemade bars are no bake!

We simply use our freezer to get them to set. Easy peasy.

These healthy snack bars are not only super easy to make they are also (and most importantly I’d say!) super delicious.

They’re a concentrate of some of the best fall flavors  – cranberries and pumpkin spice – so perfect for this time of the year!

And of course, these homemade energy bars are only made with clean nutritious ingredients. They’re sweetened with maple syrup (making them refined sugar-free!) meaning you can enjoy them guilt-free whenever you need a little pick me up!

Oh, and they’re also vegan and gluten-free!

No Bake Cranberry Pumpkin Spice Snack Bars {Paleo, Vegan and Gluten Free}

Naturally sweetened and packed with nutritious ingredients, these healthy snack bars with cranberries and pumpkin spice are the best choice for midday snacking! They're also paleo, vegan & gluten-free!

Ingredients

  • 1 1/2 cup almonds chopped
  • 1/2 cup almond flour
  • 1/2 cup pumpkin seeds
  • 1/3 cup flax meal
  • 3/4 cup unsweetened desiccated coconut
  • 1/3 cup dried cranberries
  • 1/2 cup almond butter or your favorite nut or seed butter
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla
  • 3 tablespoons maple syrup
  • 1/2 teaspoon sea salt
  • 1 1/4 teaspoons pumpkin spice

Instructions

  1. In a large mixing bowl, mix all ingredients together until well combined. Add to a 9x9 baking dish and freeze for 1 hour or until set. Cut into 12 bars and store in the freezer in an airtight container.

    1. I think you could just leave it out! But I haven’t tested it myself so I can’t be 100% sure. Let me know if you try it out!
