My version of Lebanese Fattoush salad comes with loads of fresh herbs and veggies and is topped with salty and savory grilled halloumi cheese. Using homemade tortilla chips instead of pita add some extra crunch to this healthy salad recipe!
Place one or two tortillas in the pan. Cook for about 2-3 minutes, then flip. Cook for another 2-3 minutes or until the tortilla is crispy. The idea is to toast the tortilla, so the pan should not be too hot. Repeat with remaining tortillas and turn off the heat. When cool enough to handle, break the tortillas into pieces and set aside.
You can prepare the salad ahead but add the tortilla chips and cook the halloumi at the last minute.
