This Arugula Salad with Blood Orange Segments, Mozzarella Cheese and Pomegranate Arils is proof that salads do not need to be boring! Served with a simple lemon dressing, this stunning winter salad is the perfect way to start a dinner party!
Arrange arugula on four plates. Top with mozzarella and oranges. Scatter pomegranate and mint.
Drizzle with lemon juice and olive oil. Grate some parmesan on top and season with salt and pepper to taste. Serve immediately.
To peel the skin and remove the pith of the oranges (the white membrane) at the same time, use a sharp knife and cut the top and the bottom of each orange. Then follow the curve of the orange and cut the peel + pith, going from top to bottom as close to the flesh as you can.
