Mix apples, lemon juice, sugar, spices and water in a large skillet. Bring water to a boil then reduce to medium-low, cover and cook for 15 minutes, stirring from time to time.
Dissolve cornstarch with about 1/3 cup water and add to the apples. Stir and cook for about 3 minutes or until liquid has thickened. [Some apples are very juicy and some are less, so if you find that there's not enough liquid, add a little bit more water; and if it's too juicy, add a little bit more cornstarch (diluted in water before)].
Transfer to a container, allow to cool and set aside until ready to use. It will keep up to a week in the fridge.
I like to use a mix of different apples for a complex flavor. For this recipe, I used 2 red delicious, 1 royal gala and 1 green smith.
