My Greek-Style Loaded Sweet Potato Fries topped with homemade Tzatziki, Feta and Tomato Salad are a delicious way to indulge on game day, without falling off the healthy diet wagon!
Preheat oven to 450F / 230 degrees. Line a baking sheet with foil. In a large bowl, combine sweet potatoes, paprika, olive oil, and sea salt. Mix with your hands to coat the sweet potatoes. Add sweet potatoes to the baking sheet in an even layer without touching.
Bake for 15-20 minutes, then flip, and bake another 5-10 minutes or until crispy and tender on the inside. Prepare tzatziki and tomato salad while the fries are baking.
In a large mixing bowl, mix together Greek yogurt, chopped herbs, grated garlic, lemon zest and juice, sea salt, and pepper. Grate a cucumber, then wrap in a paper towel to absorb some of the liquid. Then, mix into yogurt mixture. Set aside.
In a mixing bowl, add tomatoes, diced red onion, minced garlic, olive oil, and lemon juice. Toss with your hands to coat. Then fold in feta, sea salt, and pepper (Note: you can also sprinkle the feta at the end when serving to keep a beautiful presentation). Set aside.
