These incredibly simple Vegan Chocolate Chunk Brownie Mug Cakes are packed with rich chocolate flavor! Not only are they every variation of ooey-gooey delightful that you can magic up with what’s kicking around in your cupboards - you’re never more than one minute away from cake!
Add the dry ingredients (the first 5) to a wide mug. Stir to combine.
Pour in the oil, milk and vanilla into the mug with the dry ingredients and stir with a small fork or spoon.
Stir 1 tablespoon of chocolate chips in the batter, and then top the other tablespoon on top.
Microwave the mug cake for 50 seconds. It will likely be a little creamy in the middle still which is how I like it but if you want it cooked a tad longer, microwave it for another 10-20 seconds.
Serve immediately (with coconut whipped cream and strawberries?) and enjoy!
