  • 8 oz fresh green beans
  • 1/3 cup sun dried tomatoes roughly chopped
  • 1 tbsp shallots chopped
  • 2 tbsp fresh basil chopped

For the balsamic vinaigrette

  • 1/2 tsp Dijon mustard
  • 1 tsp balsamic vinegar
  • 2 tsp olive oil


  1. Steam your green beans (check this link for different cooking methods) and let them cool completely.
  2. Meanwhile, prepare vinaigrette. In a small bowl, mix together mustard, vinegar and oil.
  3. In a plate or small salad bowl, combine green beans, sun dried tomatoes, shallots, basil.
  4. Drizzle with vinaigrette, season with salt and pepper and serve.

Recipe Notes

I eat this salad for lunch or dinner as a main, but you could also serve it as a side. In that case, the serving size would be smaller.
