  • 1 cup fat-free ricotta one 250 g / 9 oz jar
  • 1 tbsp honey or more to taste depending on the fruits you are using
  • 1/2 tsp vanilla extract
  • 12 phyllo/filo cups – store-bought or homemade, see recipe below
  • Seasonal fresh fruits like berries in summer or grapes and kiwi in winter cut into small chunks

  1. If you are making homemade phyllo cups, start with that. Here's the recipe.
  2. In a bowl, mix ricotta with honey and vanilla extract.
  3. Spoon into phyllo cups and top with fresh fruits. Serve immediately.

Recipe Notes

The pastry will get soggy if you make these cups ahead. You can prepare the ricotta mixture ahead and spoon it at the last minute.
