medium peaches or nectarines
skin on, cut into 8 slices each (I used nectarines)

cup
arugula
aka rocket
⅓
cup
gorgonzola piccante
crumbled into small pieces - you can use another mild blue cheese

tbsp
sherry vinegar

tbsp
olive oil
salt and pepper
Instructions
Distribute arugula and peach slices on four plates. Toss gently to combine. Sprinkle with gorgonzola pieces.
In a small bowl, combine sherry vinegar and olive oil. Season with salt and pepper to taste. Drizzle over salad and serve immediately.
Recipe Notes
I found the cheese at the deli section of my supermarket.
