Grilled Chicken and Hummus Wraps

Ingredients

  • 1/2 tsp olive oil
  • 1 lbs chicken breasts about 2 breasts
  • 1/2 lemon juiced
  • sea salt
  • freshly ground black pepper
  • 1 large yellow bell pepper
  • 1 large green bell pepper
  • 4 large pita bread or your favorite wrap
  • 1 1/4 cups hummus
  • 4 tsp za'atar see notes
  • 1 cup fresh cilantro leaves roughly chopped

Instructions

  1. Start with the chicken. Heat a grill pan over high heat with olive oil. When the pan is hot, add chicken. Cook breasts for 10 to 20 minutes (depending on thickness) without moving them, then flip them using tongs and cook the other side for 10 to 20 minutes or until no longer pink inside. 

  2. Remove from heat and transfer onto a cutting board. Let cool slightly. Cut into chunks (size isn't very important). Drizzle with lemon juice and season with salt and pepper. Set aside.

  3. While chicken is cooking, prepare bell peppers. Cut in half, deseed and cut into long thin stripes. Set aside.
  4. Spread hummus on pita bread (about 5 tbsp per pita).

  5. Sprinkle with za'atar (1 tsp per pita).

  6. Add a few bell pepper strips in the center of the pita.

  7. Add chicken chunks.

  8. Top with fresh cilantro and roll.

  9. Cut wraps in half and serve immediately.

Recipe Notes

Za'atar is a delicious Middle Eastern spice blend. You can find it in some supermarkets and in Middle Eastern stores.

You can also make your own by mixing together 1 tablespoon oregano, 1 tablespoon sumac, 1 tablespoon ground cumin, 1 tablespoon sesame seeds, 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Too easy!

You can use leftovers rotisserie chicken instead of grilled chicken.
