Beat the heat with these creamy Lemon Curd and Raspberry Popsicles! This healthy frozen treat tastes just like lemon ice cream, but is made with Greek yogurt, fresh or frozen raspberries and sugar-free homemade lemon curd!
In a small pot, whisk together whole eggs, egg yolks, honey, lemon juice, zest and a pinch of salt. Add coconut oil and turn on the heat on medium-low. Cook, whisking constantly, until curd thickens, about 5 minutes. Strain curd through a sieve and pour into a large bowl. Let cool slightly.
You can also use store-bought lemon curd but keep in mind that the nutrition facts will be significantly different and the popsicles will be much sweeter. You will need to use about 1 cup + ¼ cup.
To zest lemons, I simply peel the skin with vegetable peeler then blend it using my personal blender that I love. Quick and easy! You can also use this great zester.
