Once the dough has chilled, roll it into balls (I used a standard ice cream scoop to shape them), then flatten slightly with your palm. Continue until you have about 20 cookies. Bake on a sheet pan for 13-15 minutes or until browned on edges, then cool on a wire rack before serving.
You can make your own oat flour by processing some oats in your food processor until it's a fine powder.
