    I don't think there's anything more refreshing than fresh and sweet watermelon on a hot summer day!

    I just came back from Tel Aviv where the average temperature was around 32C (90F) and right now I'm in Paris in the middle of a heat wave so watermelon feels like the perfect treat!

    Plain watermelon is delicious, but a watermelon salad with feta, red onions, and mint it's just amazing. You could call it the Ultimate Summer Salad!

    This Watermelon Salad with Feta and Mint is the Ultimate Summer Salad:

    I learned a really great tip from Nigella Lawson for making this watermelon salad: you know how sometimes red onion in salads are super strong, heavy on the stomach and on the breath?

    Well, if you marinate them in lemon or lime juice for 10 minutes before incorporating them into the watermelon salad, it will completely tone down the sharpness of the onion and make them easier to digest.

    It's super easy  (you're using the lime juice for the salad anyway!) and it works perfectly!

    Now you can eat all the onions in the world and enjoy this watermelon salad with feta without upsetting your tummy! Enjoy! 🙂

    Watermelon Salad with Feta and Mint

    Celebrate summer with this light and refreshing Watermelon Salad with Feta and Mint! It comes together in under 20 minutes and makes for the perfect bbq side dish alongside a grilled chicken breast!

    Ingredients

    • ½ small red onion sliced very thinly into half moon shapes
    • 2 limes juiced
    • 2.5 lbs seedless watermelon 1,1 kg - about ¼th of a regular sized watermelon – roughly 4 cups once cut
    • ½ cup feta cheese heaping, crumbled (about 2.5 oz / 70 g)
    • ⅓ cup fresh mint chopped (about ¼th of a bunch)
    • Freshly ground black pepper

    Instructions

    1. Place the onion in a small bowl with the lime juice and set aside for about 10 minutes while you prepare the salad. This will tone down the sharpness of the onion and make them easier to digest.
    2. Remove the watermelon's rind (and seeds if there are any). Cut the watermelon into cubes or triangles.
    3. Assemble the salad: combine watermelon, red onion, lime juice, feta cheese, and mint together. Season with black pepper to taste. Toss very gently so the feta and watermelon are not squished. Taste and adjust salt if needed. Serve immediately.

    Recipe Notes

    For more servings, double the recipe.

    Tip: to keep this salad super pretty, you can layer the ingredients in your salad bowl (repeating with ⅘ layers) instead of tossing them together. They'll still be well combined but you won't have squishing problems!

    Keep the watermelon in the fridge before making this salad, it'll be even fresher.

    You can also add some black or Kalamata olives (pitted!) and a drizzle of extra virgin olive oil for taste.

      This salad looks perfect for a hot summer night! I love the red onion trick! I have big digestion issues whenever I eat raw onion but they would be so delicious in this salad! Thanks so much for pointing it out!

      What would be a suitable substitute for feta. I am lactose intolerant.

        Hi Carmel. You could add some Parmigiano Reggiano cheese, which happens to be a 100 percent lactose-free cheese. The reason is that within 6 to 8 hours after the cheese is made, lactose is transformed into easy-to-digest lactic acid through the action of enzymes in the cheese. Enjoy!
