    Sweet Potato Casserole with Pecans, Cranberries and Bacon

    This Sweet Potato Casserole with Pecans, Dried Cranberries and crispy Bacon is a real holiday favourite and the perfect side dish for Thanksgiving!     All you want for Christmas is this Sweet Potato Casserole topped with chopped pecans, dried cranberries and bacon. Close your eyes and think about it. Crunchy pecans, sweet cranberries, beloved cinnamon and...crispy bacon.

    Dreamy, right? If I lost you at bacon, please bear with me. Trust me when I say it pairs so well with the other ingredients of this fall-inspired Sweet Potato Casserole with Pecans.

    I'm not quite sure why I incorporated bacon into my sweet potato casserole with pecans in the first place but I just couldn't help myself, I just knew it would work! Sure, you can leave it out if you insist, but I believe it's what makes this classic Thanksgiving side dish so balanced and so good.

    It's this time of the year again when I have to convince my brain that it is indeed Christmas in a few days and that I should start making plans for the big day.

    I wasn't born in Australia and for me, Christmas means cold weather, maybe even snow. Not sunny and warm days. You understand my confusion... I still need to take our Christmas tree out of the closet!

    I must confess though that I started listening to Christmas songs in late October. Couldn't help it, they're so merry and joyful! What about you? When do you start planning the holidays? Weeks in advance or a few days before?

    Sweet Potato Casserole with Pecan, Cranberry and Bacon Topping

    This Sweet Potato Casserole with Pecans, Dried Cranberries and crispy Bacon is a real holiday favourite and the perfect side dish for Thanksgiving and Christmas! Creamy mashed sweet potatoes served with a sweet & salty topping - what else could you ask for!?

    Ingredients

    • 3 large sweet potatoes peeled and cubed
    • 3 tbsp milk
    • 1 tbsp honey
    • 1 pinch salt
    • ¼ cup cooked crispy bacon chopped (about one large slice)
    • ½ cup pecans chopped
    • ⅓ cup dried cranberries chopped
    • 1 tsp ground cinnamon
    • ½ tsp ground ginger
    • ½ tsp ground allspice

    Instructions

    1. Preheat oven to 360F and lightly grease a small baking dish.

    For the sweet potato puree:

    1.  Cook sweet potatoes in a large pot filled with water, until tender. Drain and mash with a food processor (or by hand). Transfer to a large bowl. 

    2. Combine sweet potatoes, milk, honey and salt. Pour into baking dish.

    For the topping:

    1. While sweet potatoes are cooking, cook bacon and prepare the topping. Toss bacon, pecan, cranberries, cinnamon, ginger and allspice in a small bowl. Sprinkle evenly on top of sweet potato puree.

    2. Bake for 30 minutes. Remove from oven and serve immediately.

      Mmmmm...this sounds amazing! Anything with sweet potatoes is yummy, but anything with bacon brings it to a whole other level 😉 Can't wait to try this!
