This Sweet Potato Casserole with Pecans, Dried Cranberries and crispy Bacon is a real holiday favourite and the perfect side dish for Thanksgiving! Creamy, mashed sweet potatoes served with a sweet & salty topping - what else could you ask for!?
All you want for Christmas is this Sweet Potato Casserole topped with chopped pecans, dried cranberries and bacon. Close your eyes and think about it. Crunchy pecans, sweet cranberries, beloved cinnamon and...crispy bacon.
Dreamy, right? If I lost you at bacon, please bear with me. Trust me when I say it pairs so well with the other ingredients of this fall-inspired Sweet Potato Casserole with Pecans.
I'm not quite sure why I incorporated bacon into my sweet potato casserole with pecans in the first place but I just couldn't help myself, I just knew it would work! Sure, you can leave it out if you insist, but I believe it's what makes this classic Thanksgiving side dish so balanced and so good.
It's this time of the year again when I have to convince my brain that it is indeed Christmas in a few days and that I should start making plans for the big day.
I wasn't born in Australia and for me, Christmas means cold weather, maybe even snow. Not sunny and warm days. You understand my confusion... I still need to take our Christmas tree out of the closet!
I must confess though that I started listening to Christmas songs in late October. Couldn't help it, they're so merry and joyful! What about you? When do you start planning the holidays? Weeks in advance or a few days before?
