    This raw zucchini noodle salad is a healthy and low-carb alternative to pasta salads! The combination of tomatoes, feta, and pistachios adds a nice Mediterranean feel to this healthy summer salad!

    Did you know that you could use raw zucchini noodles to make salads? Spiralized zucchini (also known as zucchini noodles!), paired with a simple dressing of olive oil and lemon juice, makes the perfect fresh summer salad.

    Yep, there's no need to cook anything for this zucchini noodle salad recipe!

    From this yummy base, you can build on plenty of different salad combinations. A very popular one is Caprese, with mozzarella, basil and lots of basil or pesto. So, so good!

    Today, I'm sharing another perfect combo made with cherry tomatoes, feta cheese, mint, and pistachios.

    The fresh mint and the pistachios really make the difference here! They make this zucchini noodle salad fresh, summery and so light you can eat a huge bowl.

    This Raw Zucchini Noodle Salad is a healthy, low-carb alternative to pasta salad!

    It's one of the things I love most about eating veggie noodles: you get to eat a very big portion - sometimes double or triple of what you should be eating if you were eating pasta.

    Sure, a bowl of this zucchini noodle salad is not as filling as pasta, so you need to eat more to feel full, but psychologically, it's pretty satisfying!

    Plus it's really an easy way to eat an additional portion of veggies to your diet. Enjoy! 🙂

    Spiralized Zucchini Salad with Tomato, Feta, Mint & Pistachio

    Ingredients

    • 4 cups spiralized zucchini from about 2 large zucchini
    • 1 garlic clove minced (optional)
    • 1 tablespoon lemon juice
    • 2 tablespoons extra virgin olive oil
    • 1 pint cherry tomatoes 16 oz, 450 g, halved
    • 3 tablespoons fresh mint chopped
    • ½ teaspoon sea salt
    • freshly ground pepper to taste
    • ⅓ cup toasted pistachios roughly chopped
    • 4 oz. feta crumbled, 100 g

    Instructions

    1. In a large mixing bowl, toss spiralized zucchini with minced garlic, lemon juice, and olive oil. Then, add cherry tomatoes, chopped mint, sea salt, and freshly ground pepper. 

    2. Toss mixture well to coat. Top with toasted pistachios and crumbled feta. Serve immediately!

      I have actually never eaten a dish with raw zucchini but this salad looks so tempting that I might just give it a try! The combination of feta, tomatoes, and pistachios sounds incredible!
