Did you know that you could use raw zucchini noodles to make salads? Spiralized zucchini (also known as zucchini noodles!), paired with a simple dressing of olive oil and lemon juice, makes the perfect fresh summer salad.

Yep, there’s no need to cook anything for this zucchini noodle salad recipe!

From this yummy base, you can build on plenty of different salad combinations. A very popular one is Caprese, with mozzarella, basil and lots of basil or pesto. So, so good!

Today, I’m sharing another perfect combo made with cherry tomatoes, feta cheese, mint, and pistachios.

The fresh mint and the pistachios really make the difference here! They make this zucchini noodle salad fresh, summery and so light you can eat a huge bowl.

This Raw Zucchini Noodle Salad is a healthy, low-carb alternative to pasta salad!

It’s one of the things I love most about eating veggie noodles: you get to eat a very big portion – sometimes double or triple of what you should be eating if you were eating pasta.

Sure, a bowl of this zucchini noodle salad is not as filling as pasta, so you need to eat more to feel full, but psychologically, it’s pretty satisfying!

Plus it’s really an easy way to eat an additional portion of veggies to your diet. Enjoy! 🙂
