And since the surroundings were incredible, we had to have an outstanding meal, right? So I decided to make my favorite sandwich recipe ever: French baguette with prosciutto, pesto, fig chutney, and arugula. God, I wish I could eat this sandwich more often! Recipe coming soon!!

Smoked Salmon Club Sandwich
This Smoked Salmon Club Sandwich is an elegant twist on the All American Classic Clubhouse Sandwich. Layered with smoked salmon, cream cheese, cucumber and onion slices, this easy sandwich makes for a great light lunch or picnic food.
- 8 slices white/whole wheat bread
- 3 oz light Philadelphia cream cheese
- 1/3 cucumber sliced
- 2 medium tomatoes sliced
- 8 oz smoked salmon aka lox
- 1/4 cup red onions sliced
Toast the sandwich bread and spread one side of the bread with cream cheese. Set aside half of the sandwich slices (4 slices).
For each sandwich, add 4 cucumber slices, 2 tomato slices, 1/4 of the smoked salmon, and 1/4 of the sliced red onions on each of the 4 bread slices. Top with remaining toasted sandwich bread.
Using a serrated knife, cut each sandwich diagonally into 4 triangular pieces. Secure each piece with a toothpick and enjoy!
I served it with some potato chips and a salad. Delicious dinner.
