On most weekdays, I won't really cook for lunch. If I'm working on recipes for the blog or my cookbook, I'll just munch on the things I'm making or I'll grab some leftovers from the night before (if Solal didn't devour everything!). On "cooking days", I typically have to cook and shoot three to four recipes before the sun starts setting (it's around 5 pm these days!) so I don't have time to take an actual lunch break. On "non-cooking days" though, when I'm working on my computer, I'll make myself some sort of a big salad with all the things I can find in my fridge. The golden rule: it has to be ready quickly and be healthy!
These Skinny Tuna Salad in Lettuce Cups make an ideal lunch if you're a little short on time but still want to eat a good homemade, non processed and cheap meal. If you don't work from home and want to take these to the office, no worries! Just prepare the tuna salad the night before or in the morning, cut the lettuce leaves and pack them in two separate containers. When you're ready to eat at work, just spoon the tuna salad on the lettuce cups and eat them as wraps! Et voila 🙂
Skinny Tuna Salad in Lettuce Cups
Ingredients
- 15 oz / 425 g canned tuna in water drained
- ½ cup Greek yogurt I used fat free
- 1 tbsp Dijon mustard
- 1 ½ tbsp pickled cucumbers aka pickles, finely chopped
- 1 ½ tbsp red onions finely chopped
- ½ continental cucumber skin on, chopped into small cubes
- 5 lettuce leaves see notes
Instructions

Combine all the ingredients, except lettuce leaves, in a medium bowl. Season with salt and pepper if needed.

Spoon about ½ cup of tuna salad on each lettuce leaf and serve!
Recipe Notes
You can use any kind of lettuce. For these pictures, I used iceberg lettuce leaves that I cut with scissors to give them a nice "cup" shape.

Do you have a favorite/recommended type of pickled cucumber? In the States we have a wide variety to choose from: sweet, bread & butter, spicy, etc. Just curious what kind of flavor "pickle" you have used. Thanks!

Hi Amanda! For this recipe, I used traditional pickles, the ones with dill and vinegar. Hope this helps!
