    Let's start with the facts. This (salivating) blue cheese artichoke dip you see pictured here is only 87 calories per serving, which is two big fat tablespoons. Let's be real for a minute and imagine that you're going to have two servings because that's just how irresistible it is, and you still get away with 174 calories. Can I get a hallelujah?

    Now who cares if it's lighter than the other dips if it's not as good, right? Plus, you don't want your guests or your family to know you've "healthified" the dip otherwise they'll say/think they prefer the regular one – even though it's just their brains tricking them. Well, good news! This dip is freakin' delicious! Pardon my French, but really, it's just so good! No way it tastes "skinny" or bland. It's just a plain and simple crowd pleaser!

    Artichoke dips are usually made with mayo. In this recipe, I used Greek yogurt instead and light cream cheese. I was afraid the Greek yogurt would curdle when cooking but not at all! The result is a super creamy dip you'll want to devour. The seasonings - paprika, nutmeg and Tabasco - are really important to get that perfect flavor so don't skip them! Enjoy 🙂

    Skinny Blue Cheese Artichoke Dip

    Ingredients

    • 1 package 8 oz - 225 g reduced fat cream cheese take it out of the fridge one hour before starting so it's at room temperature
    • 1 cup thick and creamy Greek yogurt
    • ½ cup blue cheese crumbled
    • 1 cup parmesan cheese shredded, divided
    • 1 can 14 oz - 400 g artichoke hearts drained and roughly chopped
    • 1 tsp garlic finely chopped (about half a clove)
    • 2 tsp smoked paprika
    • ½ tsp nutmeg
    • ½ tsp freshly cracked black pepper
    • 1 tsp Tabasco sauce

    Instructions

    1. Preheat oven to 350F - 180C.
    2. In a large bowl, add soft cream cheese, Greek yogurt, blue cheese and ½ cup parmesan cheese. Mix until well combined. Add remaining ingredients (artichoke, garlic, paprika, nutmeg, black pepper, Tabasco sauce) and mix.
    3. Pour into a medium baking dish and sprinkle with remaining parmesan (½ cup).
    4. Bake for about 25 minutes or until top is slightly golden. Remove from the oven and serve hot with chips, crackers or veggie sticks.
