    Please meet the ultimate summer comfort food: This easy-to-make  Shrimp Pasta Salad . Believe me, it's so good you won't get enough of it. Especially when it's hot outside, this simple pasta salad with fresh shrimp, onions and rigatoni pasta, makes for the perfect refreshing lunch or light dinner!

    Undoubtedly, this Shrimp Pasta Salad is also a perfectly simple and light side dish to bring to any BBQ or backyard party.

    When making this Shrimp Pasta Salad, there'll be no big surprises with the salad ingredients. You'll only need some pasta (I used Rigatoni, they do the job perfectly), cooked shrimps, light mayonnaise, red onion and lemon.

    If you don't like shrimp on your pasta salad, not a problem! Just sub with grilled chicken, salmon or tuna!

    Here is a simple trick on cooking pasta perfectly. I always use a fat-free and low sodium chicken bouillon cube (from Knorr) or liquid stock to cook my rigatoni pasta. It gives a wonderful flavor to the  Pasta Salad without adding any calories.

    I highly recommend that you don't eat this Shrimp Pasta Salad right away but let it stand in the fridge for at least 30 minutes after making it. This short resting period will allow for the flavors to fully develop and the pasta salad will still taste fresh. Believe me, it's like 10 times better.

    Ingredients

    • 2 oz uncooked rigatoni pasta
    • 3 cups chicken stock
    • 3 oz cooked shrimps peeled and deveined
    • ¼ cup red onion chopped
    • 1 tbsp light mayonnaise
    • 1 lemon juiced
    • chives for garnish (optional)

    Instructions

    1. Cook pasta according to package direction in chicken stock instead of water. Set aside and let cool completely.

    2. In a large bowl, combine cooled pasta, shrimps and chopped onion. Add mayonnaise and lemon juice to the salad ingredients. Toss well.

    3. Cover the salad bowl with cling film and set it aside in the refrigerator for at least 30 minutes or until ready to eat. Garnish with chopped chive and serve.

    Recipe Notes

    You can easily double or tripe the recipe if you need to make this for a larger crowd.
