Undoubtedly, this Shrimp Pasta Salad is also a perfectly simple and light side dish to bring to any BBQ or backyard party.
When making this Shrimp Pasta Salad, there’ll be no big surprises with the salad ingredients. You’ll only need some pasta (I used Rigatoni, they do the job perfectly), cooked shrimps, light mayonnaise, red onion and lemon.
If you don’t like shrimp on your pasta salad, not a problem! Just sub with grilled chicken, salmon or tuna!
Here is a simple trick on cooking pasta perfectly. I always use a fat-free and low sodium chicken bouillon cube (from Knorr) or liquid stock to cook my rigatoni pasta. It gives a wonderful flavor to the Pasta Salad without adding any calories.
I highly recommend that you don’t eat this Shrimp Pasta Salad right away but let it stand in the fridge for at least 30 minutes after making it. This short resting period will allow for the flavors to fully develop and the pasta salad will still taste fresh. Believe me, it’s like 10 times better.
