This Paleo Sheet Pan Herbed Salmon with Green Beans and Cherry Tomatoes is simple, yet elegant enough to serve to company! It's also the perfect easy one sheet pan recipe for meal prep!
Ingredients
Herb mixture:
- ¼ cup finely chopped basil
- 1 tablespoon finely chopped thyme
- 1 tablespoon finely chopped marjoram or oregano
- 1 tablespoon finely chopped chives
- 3 garlic cloves minced
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- 1 Pinch sea salt
- freshly ground pepper to taste
Other ingredients:
- ½ lb. green beans, de-stemmed 225 g
- 6 oz. cherry tomatoes 170 g
- 4 salmon fillets, rinsed and patted dry 130 g , 4.5 oz
- 2 garlic minced
- ½ lemon
- 2-3 tablespoons olive oil
- sea salt to taste
- freshly ground pepper
Instructions

Preheat oven to 400F/200C degrees.

Mix together all chopped herbs, garlic, lemon and olive oil in a small bowl. Season with salt and pepper to taste and stir. Set aside.

Line a sheet pan with foil, then add green beans in one even layer, then cherry tomatoes and salmon fillets. Drizzle olive oil (about 2-3 tablespoons) over green beans and cherry tomatoes. Sprinkle minced garlic over vegetables, then use your hands to coat everything well.

Add herb mixture evenly between salmon filets. Sprinkle with flaky sea salt and freshly ground pepper. Bake for 20 minutes or until tomatoes have burst, beans are tender and salmon is cooked through. Squeeze lemon juice over top and serve immediately.

This recipe is proof that having a stressful day is no excuse for eating poorly! I don't think a salmon dinner could get any easier and I love that the sides bake with the salmon, so that you have everything ready to go at once!
