    This Herbed Salmon with green beans and blistered tomatoes is a simple sheet pan recipe, perfect for company. 

    20 minutes prep and you've got a delicious + nutritious dinner ready to be served! Forget the headache of cooking a complicated meal and washing the equivalent of your weight in dishes.

    Eating healthy and yummy meals is as easy as this herbed salmon with green beans and cherry tomatoes recipe. 

    I love that every element of this healthy paleo dinner comes together at the same time. No need to think about a side or a salad to go with your herbed salmon. It's all there.

    If you need to, you can easily double the ingredients for more servings. Either use a bigger sheet pan if you have a large oven or make two batches to make sure the pan's not too crowded and the tomatoes and green beans cook evenly.

    Sheet Pan Herbed Salmon with Green Beans and Cherry Tomatoes {Paleo}

    Ingredients

    Herb mixture:

    • ¼ cup finely chopped basil
    • 1 tablespoon finely chopped thyme
    • 1 tablespoon finely chopped marjoram or oregano
    • 1 tablespoon finely chopped chives
    • 3 garlic cloves minced
    • 1 teaspoon lemon juice
    • 1 tablespoon olive oil
    • 1 Pinch sea salt
    • freshly ground pepper to taste

    Other ingredients:

    • ½ lb. green beans, de-stemmed 225 g
    • 6 oz. cherry tomatoes 170 g
    • 4 salmon fillets, rinsed and patted dry 130 g , 4.5 oz
    • 2 garlic minced
    • ½ lemon
    • 2-3 tablespoons olive oil
    • sea salt to taste
    • freshly ground pepper

    Instructions

    1. Preheat oven to 400F/200C degrees.
    2. Mix together all chopped herbs, garlic, lemon and olive oil in a small bowl. Season with salt and pepper to taste and stir. Set aside.

    3. Line a sheet pan with foil, then add green beans in one even layer, then cherry tomatoes and salmon fillets. Drizzle olive oil (about 2-3 tablespoons) over green beans and cherry tomatoes. Sprinkle minced garlic over vegetables, then use your hands to coat everything well.
    4.  Add herb mixture evenly between salmon filets. Sprinkle with flaky sea salt and freshly ground pepper. Bake for 20 minutes or until tomatoes have burst, beans are tender and salmon is cooked through. Squeeze lemon juice over top and serve immediately.

      This recipe is proof that having a stressful day is no excuse for eating poorly! I don't think a salmon dinner could get any easier and I love that the sides bake with the salmon, so that you have everything ready to go at once!

      This meal was great. I prepared it for a family visit. Don't usually try a recipe for company but it was a one pan dinner and I needed something I could prepare and pop in oven 20 mins. before ready to eat. What a hit.Fish tomatoes and green beans delish. This is a keeper.
