Obviously, you could take laziness to the next level by eating your chicken fajitas straight from the sheet pan. What I love most about this sheet pan recipe, is that it is a family-friendly all-in-one meal that is low carb, dairy-free, gluten-free and refined sugar-free. Even paleo and Whole30-friendly as it is topped with a dairy-free Mexican avocado crema!
Does it taste like health food? Nope - this tastes just like those impressive-looking restaurant-style sizzling fajitas we all wish we had ordered instead of that boring old salad in front of us.
And can we talk about the dairy-free avocado sauce for a second? Bright zesty, creamy - this cilantro lime avocado sauce is serious green goddess stuff and tastes great on everything! I actually recommend you make a double batch as it stays well in the fridge for a few days.
Let me repeat: Naturally, paleo, gluten-free, low in carbs, easy and cheap to make and oh-so-delicious! This healthy Mexican chicken fajitas dinner will be one you want to keep in the rotation. Even if you’re not doing a Whole30 this is a delicious chicken sheet pan recipe that anyone will love - regardless of your diet!
Is fajita mix and tacos mix the same?
Yes. Both spice mixes are largely the same, with the same list of ingredients such as chili powder, cumin, garlic powder, and Mexican oregano. I would recommend buying whole spices as opposed to spice mixes and make your own mix from scratch whenever you need it.
How to make Creamy Cilantro Avocado Lime Sauce:
Step 1 - Prepare the sauce by placing all the sauce ingredients in your blender or food processor with ½ cup of water. Process until very smooth, adding a few tablespoons of water at a time until you reach a drizzle-able consistency. I used 1 cup of water but you might need slightly less or more. Transfer your avocado sauce into a bowl or container and set aside.
How to make taco seasoning for chicken fajitas:
Step 2 - Make your taco spice blend. Making your own taco seasoning is really simple. In a small bowl, combine all your spices - the chili powder, cumin, paprika, oregano, garlic powder, and salt - and stir to combine.
How to cook Sheet Pan Chicken Fajitas in an oven:
Step 3 - Preheat oven to 400F/200C. Place bell peppers, onion, and chicken on a large baking sheet. No need to line the pan.
Step 4 & 5 - Drizzle your chicken and veg with olive oil and toss to coat. Sprinkle prepared spices over veggies and chicken, and toss until well coated and combined.
Step 6 - Bake for 10 minutes, give everything a stir and bake for another 6 to 10 minutes or until chicken is cooked through. The chicken is done when it is at 165 degrees F - no longer pink inside but still juicy. Please note: all ovens are different so exact timing will differ. It’s better to err on the side of caution and check regularly to avoid dry chicken.
Step 7 - Remove the sheet pan from the oven and serve drizzled with sauce.
Should I line the sheet pan?
Nope, not necessary! The chicken breast and veggies charr more nicely without the parchment paper and they slide right off the sheet pan once done. So there’s really no need to line it with foil or parchment paper.
What shall I serve with chicken fajitas?
You can go all Mexican and serve your chicken fajitas with tortillas, pico de gallo and guacamole. For Taco Tuesday, you can roll everything up and serve it taco-style. Alternatively, you can ditch the carbs by cutting out the tortillas and using lettuce leaves as a low-carb taco substitution.
If you want to keep things even more low cal, serve the chicken and veg with or on top of a salad. Want to make a bowl? Pile your fajitas on top of some broccoli rice or cauliflower rice and drizzle with the sauce.

- For this recipe, any color of bell peppers works but a mix looks the nicest.
- Make sure not to overcook the chicken. You’ll know when the chicken is finished cooking when it’s 165 degrees F in the center.
- Make sure to toss the chicken fajitas halfway through the baking time. This step ensures everything cooks evenly.
- The creamy avocado sauce will last for a few days in the fridge without browning thanks to the lime juice.
- This recipe is perfect for meal prep! Simply pack the meat+veggies, the tortilla, and the sauce separately. If you make this with rice, everything can be packed together.
- Want to spice things up? Add some jalapeños along with the peppers and red onions.
- If you have leftover sheet pan chicken fajitas, you can heat them in a skillet on the stove. This will prevent the chicken breast from becoming tough and rubbery and the peppers from turning to mush as it would happen if reheated in the microwave.

Ingredients
- 1 yellow bell pepper cut into thin strips
- 1 green bell pepper cut into thin strips
- 1 red bell pepper cut into thin strips
- 1 red onion sliced
- 1 lbs chicken breast, cut into strips (one large breast) 450 g
- 2 tablespoons olive oil
- ½ cup fresh cilantro to serve
Spice mix:
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- ½ tsp garlic powder
- ½ tsp salt
Creamy Cilantro Avocado Lime Sauce
- 1 large ripe avocado or 1.5 if small
- 3 limes juiced - about 6 tablespoons
- 4 cups fresh cilantro roughly chopped (about a small bunch)
- 1 cloves garlic minced
- 3 tablespoons olive oil
- ¼ teaspoon ground cumin - optional
- ½ teaspoon sea salt
- Water
