An easy fudge recipe that's not only made with healthy wholesome ingredients but super delicious too! Recipe on NotEnoughCinnamon.com #glutenfree #vegan #cleaneating

This vegan peanut butter chocolate fudge is not only made with healthy wholesome ingredients but also delicious! Perfect as a DIY Christmas gift or as a snack. A naturally gluten-free homemade treat.

There is something strangely addictive about this vegan peanut butter chocolate fudge.

Seriously, it's like you keep coming back for more without being able to resist. Like the arm opening the fridge and reaching for another piece isn't really controlled by your brain anymore.

But are you really surprised? I mean, peanut butter + chocolate you guys!

It's like, in the top 10 of my most favorite flavor combos. No actually, scratch that, in the top 5. And when it's salted peanut butter + chocolate... O.M.G. better strap that arm tightly!

Slightly crunchy and packed with healthy peanuts, peanut butter, and shredded coconut!

There are different kinds of fudge and this peanut butter chocolate fudge isn't like the soft caramel kind. It's definitely more on the crunchy side, without being too hard either (didn't want you to lose your teeth - not pretty for all these holiday parties!).

The little holes you see are because of the shredded coconut. It gives our homemade vegan fudge density and adds a lovely hint of coconut flavor.

If you really want your homemade fudge to have a smooth texture, skip the shredded coconut and use smooth peanut butter instead.

The other thing I love about these vegan treats is how easy they are to make. It's like you just mix a few simple ingredients together, chill everything to let it set and bam, you're done.

Super convenient if you're planning to make some peanut butter chocolate fudge during the holiday season as little edible Christmas gifts!

    Enjoy! 🙂

    Ingredients

    For the fudge

    • 1 cup natural peanut butter crunchy
    • ½ cup coconut oil liquified
    • ¼ cup maple syrup
    • 1 teaspoon vanilla extract
    • ½-3/4 teaspoons sea salt
    • 1 cup shredded coconut unsweetened
    • 1 cup semisweet or bittersweet chocolate chips use dairy free chips to keep vegan

    Toppings

    • Chocolate chips, flaky sea salt, toasted coconut, chopped & toasted peanuts (I used salted peanuts)

    Instructions

    1. In a large mixing bowl, stir together peanut butter, coconut oil, maple syrup, vanilla, salt, and shredded coconut until well combined.

    2. Over a double boiler (or in a microwave), gently melt chocolate chips until completely melted and smooth. Stir into peanut butter mixture. Reserve some for topping drizzle

    3. Add fudge mixture to a standard loaf pan (9x5) in one even layer. Drizzle reserved chocolate overtop. Add toppings here, if using, then freeze to set for 30 minutes.

    4. Cut with a sharp knife into 14 even pieces. Let thaw for 10 minutes before serving. Store in fridge for up to 10 days, covered.

    Recipe Notes

    • You can make these without the shredded coconut for a smoother texture but it will yield less bars (and I love the discreet flavor it adds)

LOVE the peanuts on these. I like a little crunch in my fudge. Too soft and I end up with more on my hand than in my mouth haha.
