    Happy New Year 2018 guys! After eating just a little bit too much good food in December for the holidays, I feel like it would do us good to hit the reset button in terms of food.

    I'm thinking we all need something green, nutritious but still delicious to help us feel great! Something like this Healthy Oven-Roasted Cauliflower Quinoa Detox Bowl!

    Admittedly, although I've been quite good during this whole holiday season because we were in Vienna and didn't have too many parties to go to, I did indulge a little bit too much on Christmas Eve and Christmas Day.

    My mom and my brother flew over from Paris, and I prepared them a beautiful feast. I did overeat for sure, but it was so delicious I don't regret it one bit!

    This Oven-Roasted Cauliflower & Quinoa Detox Bowl is the perfect meal to beat the post-Christmas blues!

    We all struggle with that transition between December 26th and January 1st when you're not too sure what to do with yourself.

    You feel like it's still the holiday season aka. you can indulge (and in my case, eat more than I usually do), but you also have to start being reasonable again because January is right around the corner and soon you will no longer have excuses.

    Difficult times! This oven-roasted cauliflower quinoa bowl is perfect for this time of the year. It's filling and comforting!

    With those roasting aromas from the cauliflower and the nuttiness of the quinoa, paired with that creamy tahini sauce, you won't even feel like you're eating healthy food.

    Making this oven-roasted cauliflower quinoa detox bowl is kinda me saying to myself: "Ok Marie, time to start making healthy choices again. You've had your fun, now it's time to move on".

    And honestly? I was starting to feel not so good physically – feeling heavy, no energy, tummy ache and so on – so I'm happy to go back to my healthy eating routine!

    Roasted Cauliflower Quinoa Detox Bowl with Tahini Sauce {Vegan + Gluten Free}

    Ingredients

    • 2.5 lbs. cauliflower de-stemmed & chopped into 1 in. pieces
    • 3 tablespoons olive oil
    • 3 tablespoons fresh thyme leaves or rosemary or oregano
    • Sea salt to taste
    • Freshly ground pepper
    • 1 ½ cups quinoa uncooked
    • 2 cups kale roughly chopped
    • 1 avocado cubed or sliced
    • 1 lemon quartered
    • ¼ cup hemp seeds to top - optional

    Lemon Tahini Sauce:

    • ⅔ cup tahini
    • 1 tablespoon white miso paste optional
    • ½ lemon juiced
    • 1 teaspoon tamari or soy sauce
    • ½-3/4 cup water depending on desired consistency.
    • salt and pepper

    Instructions

    1. Add cauliflower to a large baking sheet in one even layer. Drizzle with olive oil, thyme, sea salt, and freshly ground pepper to taste. Toss with your hands to coat, then roast for 35-40 minutes or until browned and tender. Set aside.
    2. In the meantime, add 1 ½ cup quinoa and 3 cups of water to a medium saucepan with a generous pinch of salt. Bring to a boil, then simmer and cover for 12-15 minutes or until fluffy. Use a fork to fluff, then add kale overtop and cover (off-heat). This will steam the kale while you make the dressing.
    3. Make the dressing: In a medium mixing bowl, whisk together all ingredients until smooth (adding water gradually depending on desired consistency). Season with flaky sea salt and freshly ground pepper.

    4. To assemble bowls, layer quinoa, steamed kale, roasted cauliflower, and ¼ an avocado in each bowl. 

    5. Squeeze the juice of 1 lemon over top each serving. Season with sea salt and freshly ground pepper. Then, add a generous drizzle of tahini sauce overtop. Sprinkle with hempseed and eat immediately!

      Oh my, that slippery slope of a week between Christmas and New Years where the whole house is full of candy and there's one party after another. I wouldn't mind one bit if I could bring this delicious quinoa bowl to a post-Christmas potluck! It looks like the perfect way to get one's diet back on track!
