These little pumpkin chocolate chip muffins are perfection on every possible level!
The taste, the fluffy and moist texture, and the nutrition. These pumpkin chocolate chip muffins are amazingly soft and moist, and they are not grainy or eggy like some paleo muffins can be.
No tolerance for these kinds of muffins over here, uh uh! We love treats and desserts made healthier with wholesome and nutritious ingredients, but they gotta taste fantastic!
Of course, the dark chocolate chips are optional, but why would you skip them? Half of my excitement today comes from the choc chips - because, a gazillion chocolate chips in a mouthful is always something to be excited about.
The other half comes from all the concentrated fall flavors that make me want to curl up on the couch in a blanket by the fire. It may become too hot too quickly, but I don't care – as long as my pumpkin chocolate chip muffins are easily reachable.

May I recommend something so that you don't devour them all at once?
Either give some of these pumpkin chocolate chip muffins to your friends and neighbors if you're feeling generous OR keep one or two and freeze the rest once they've cooled completely.

Pumpkin Chocolate Chips Muffins {Paleo + Gluten Free}
Easy paleo pumpkin muffins, with extra chocolate chips. Made with pumpkin spice and pumpkin puree, these muffins are the perfect Fall treat! Gluten free, too.
Ingredients
- 1 ½ cup almond flour
- ¼ cup arrowroot or tapioca flour
- ¼ cup flaxseed meal
- 1 teaspoon baking soda
- 2 teaspoons pumpkin spice
- ¾ teaspoon sea salt
- 1 cup pumpkin puree unsweetened
- 1 large egg
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla
- 2 tablespoons almond milk
- 1 tablespoons coconut oil
- ¼ cup maple syrup
- 1 heaped cup mini dark chocolate chips use dairy + sugar free chips to keep paleo
Instructions

Preheat oven to 350F/ degrees.

In a large mixing bowl, whisk together almond flour, tapioca/arrowroot flour, flaxseed meal, baking soda, pumpkins spice, and salt.

In a separate mixing bowl, whisk together pumpkin, egg, apple cider vinegar, vanilla, coconut oil, almond milk, and maple syrup.

Stir wet ingredients into the dry until well combined. Fold in chocolate chips.

Add muffin liners to a standard muffin pan. Divide batter evenly among the 12 muffins. Bake for 22-25 minutes or until browned and when the toothpick comes out clean. Cool for 20 minutes before serving.

These look great. I really like that they don't have coconut flour, as that tends to cause stomach problems for me and my daughter. I will try making these tomorrow. Soon I will go to be dreaming of these!
