a small pile of paleo energy balls with cranberries and coated with chopped pistachios

After my granola energy bites and my banana bread energy bites, it’s time for another healthy snack attack but this time, a fall and winter edition with pistachio and cranberries paleo energy balls!

To me, cranberries just scream holidays, and pistachios just go so well with them! Ever tried my cranberry and pistachio rice? A side dish must for the holidays!

These paleo energy balls are made with only three ingredients:

  • Medjool dates as a base,
  • pistachios,
  • and dried cranberries.

And that is IT! I love me some super easy snack recipes!

For making these paleo energy balls, you practically dump the ingredients in the food processor, roll them into balls, chill them in the fridge and BAM you’re done.

Enjoy! 🙂
