After my granola energy bites and my banana bread energy bites, it's time for another healthy snack attack but this time, a fall and winter edition with pistachio and cranberries paleo energy balls!
To me, cranberries just scream holidays, and pistachios just go so well with them! Ever tried my cranberry and pistachio rice? A side dish must for the holidays!
These paleo energy balls are made with only three ingredients:
- Medjool dates as a base,
- pistachios,
- and dried cranberries.
And that is IT! I love me some super easy snack recipes!
For making these paleo energy balls, you practically dump the ingredients in the food processor, roll them into balls, chill them in the fridge and BAM you're done.

Pistachio and Cranberry Energy Bites {Paleo + Vegan}
Need a sweet, yet healthy pick-me-up? Make these cranberry and pistachio energy balls! All you need are three ingredients to make this easy paleo and vegan snack!
Ingredients
- 2 cups shelled pistachios divided
- 12 large Medjool dates (about 6 ½ oz / 200 g)
- ½ cup dried unsweetened cranberries
Instructions

In your food processor, process 1 cup of pistachios until finely chopped (but not powdered). Remove from the bowl and set aside.

Process 1 cup of pistachios until finely chopped, then add the Medjool dates and the cranberries and process until well combined.

Add about 2 teaspoons hot water and process until mixture comes together and forms a ball.

With damp hands, roll 2 level teaspoons of mixture into balls. You should get about 18-20.

Roll balls in reserved pistachios to coat pressed a little to make sure they stick. Place on a baking sheet lined with parchment paper. Refrigerate for one hour before serving.
