     Today is all about nostalgic, sweet lunch sandwiches aka. Peanut Butter and Banana Sandwiches. But before we talk about the recipe, I need to tell you guys that we found the most perfect peanut butter there is. Like, the best peanut butter in the whole wide world. Ok, maybe just the best one in Australia.

    I'm not sure I want to admit it but it's even better than homemade PB. And that's saying a lot. The only ingredient is roasted peanuts so I'm not quite sure what their secret is, but maybe if I keep eating some I'll uncover it?

    Right. And then I'll be able to recreate it. Pass the spoon please, I have work to do...

    This little wonder is made by a company called Ambrosia and if you're Aussie, you should definitely check them out! Solal found the jar completely randomly when I sent him, panicked, to our local convenience store.

    I was about to start making these fun peanut butter and banana sandwiches when I realized I only had about one teaspoon PB left. Annoying, when it's one of the main ingredients.

     I was already in love with these sweet breakfast sandwiches because –hello!– peanut butter + banana, but now, I'm forever grateful.

    So these peanut butter and banana sandwiches. They look totally unhealthy, but really they're not that bad. I would even say perfectly fine if you have no problem eating gluten or grains.

    The trick is not to eat all four of these peanut butter and banana sandwiches because then, yes, it will show up on your hips. Half a sandwich was enough for me as a snack.

    Also, to make these healthier, you could totally leave the sauce out, but that's optional. Because chocolate is good, right? And with peanut butter, it's even better! As these are sweet sandwiches, I used raisin bread for this recipe and loved it, but you can go with any bread you like.

    Peanut Butter and Banana Sandwich with Chocolate Peanut Butter Sauce

    Ingredients

    For four sandwiches:

    • ½ cup natural peanut butter without salt, sugar or oil added
    • 8 slices raisin bread
    • 2 bananas sliced
    • 2 tsp honey

    Sauce (for four sandwiches)

    • 3.5 oz baking dark chocolate 100 g, I used Lindt dessert chocolate with 70% cocoa, cut into pieces
    • ¼ cup natural smooth peanut butter without salt, sugar or oil added
    • ½ cup water

    Instructions

    1. Spread peanut butter on each slice of bread. Arrange banana slices on half of the slices. Drizzle with a little bit of honey and top with remaining bread.

    2. Heat a non-stick skillet over high heat. Add two sandwiches (or more depending on the pan's size) and cook, pressing with a spatula, for about 1 minute or until golden. Flip and cook the other side until golden. Remove from skillet, set aside and repeat with remaining sandwiches.

    Sauce

    1. In a small pot, add chocolate, peanut butter and water. Melt chocolate on low heat, very gently and mix to combine all the ingredients and make a smooth sauce. 

    2. Dip sandwiches into chocolate sauce or drizzle sauce over sandwiches and serve.

      I A DROOLING OVER THESE! How good does that chocolate sauce look and raisin bread would definitely be my choice of bread as well!
