When it comes to dinner recipes, I love anything that allows me to end my day on a less hectic note, freeing up some time for the fam. As much as I love to spend time in the kitchen, I don’t want to spend my evening sweating over the stove when I could be with my kiddies and hubby.
Healthy Sheet Pan Ranch Chicken is a weeknight time saver!
Easy no-fuss chicken sheet pan dinners are one of my favorite weeknight time savers. No need to worry about washing multiple pots and dishes. You basically toss all of your ingredients in one pan and bake! DONE and done! Ever since I started making my own Ranch seasoning, I'm on a bit of a Ranch kick lately (hello Paleo Ranch Chicken Poppers and Ranch Dip). This sheet pan dinner is my latest obsession! I know you will love it, too!
My healthy Sheet Pan Ranch Chicken Dinner is as easy as it gets. You chop up some chicken breast and veggies pop it in the oven and forget about it. If you're curious, you can check it once to make sure it all cooks evenly. And that's it - dinner’s on the table.
Picture perfectly tender and charred chicken and veggies that are loaded with the creamy and tangy flavors of ranch seasoning! Serve as is or with rice or cauliflower rice or quinoa and your meal-prep for an entire week of healthy meals is done!
The recipe serves 2 but you can double, triple or quadruple it. You might want to use 2 baking sheets though. The space available on the sheet pan matters because you do not want to overcrowd the pan when cooking to allow for nice charr.
Can I make this paleo sheet pan dinner ahead of time?
YES! You can do some of the prep work ahead of time: Cut vegetables, and the chicken and mix the spices the night before or in the morning if you are looking to speed up the process.
How to make Healthy Sheet Pan Ranch Chicken
Step 1 & 2 - Start by making the Ranch Seasoning. Simply mix all the ingredients in a small bowl. Store in an airtight container.
Preheat oven to 200C/400F.
Step 3 - Prep your ingredients. The size of the cut is VERY important to ensure ingredients are all cooked at the same time. Cut large chicken chunks (about 1.5 inch / 3-4 cm), small potato chunks (about ¾ inch / 1.5 cm), large broccoli florets and thick onion slices. Check the pictures in the post for a visual.
Step 4 - Arrange broccoli, chicken, potatoes and onion on a large baking sheet (keeping them separated). Drizzle with olive oil and sprinkle evenly with ranch seasoning. Mix to coat and spread to avoid them overlapping as much as possible.
Step 5 - Bake for 30 minutes or until all the ingredients are cooked through. (If you see that one of the ingredients is starting to overcook, remove it from the pan – but it shouldn’t happen if you followed my size guide). Remove from the oven and serve!
Tips & Substitutions:
- Serve this with chopped parsley, dill, or chives.
- You can swap broccoli for cauliflower, and potatoes for sweet potatoes or squash. Or add some brussels sprouts, bell pepper, asparagus or green beans!
- Of course, you can use store-bought Ranch seasoning but I recommend you make your own as the store-bought kind usually has added sugar and starch added to it.
- To take this to the next level, serve this sheet pan chicken dinner with my homemade dairy-free avocado ranch dressing.
Healthy Paleo Sheet Pan Ranch Chicken ( Dairy-free / Whole30)
Ingredients
- 1 large chicken breast or 3 boneless skinless thighs
- 2 cups baby red potatoes
- 4 cups broccoli 1 small head
- 1 small red onion
- 3 tablespoons olive oil
- 1 tablespoon ranch seasoning see recipe below
Dairy Free / Whole30 Ranch Seasoning
- 3 tbsp dried parsley
- 1 tbsp dried dill
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 2 tsp salt
