Greek Lemon Chicken Skewers
Nothing says summer like these delicious Greek Lemon Chicken Skewers marinated in oregano, garlic, and lemon. So simple yet so delicious! Pair these with Greek salad and a side of tzatziki for a low carb meal!
Ingredients
- 1.2 lbs chicken breast 550 g, cut into even size cubes
- 1 tbsp olive oil
- 1 tbsp fresh oregano packed, using fresh herbs tastes better but you can also use 1 tsp dried oregano instead
- 2 cloves garlic minced
- 2 tbsp fresh lemon juice the juice of about 1 medium lemon
- 1 tsp sea salt
- 1 tsp black pepper
- a few lemon slices to serve
Instructions

Place chicken chunks in a ziplock bag or a dish, add olive oil, oregano, minced garlic, lemon, salt, and pepper. Mix thoroughly until ingredients are well combined.

Seal the bag tightly or cover the dish with plastic wrap. Marinate for at least two hours or ideally overnight (the longer the better!). If using wood skewers, soak them in water for a few hours too.

Prepare the skewers. Remove the big garlic and oregano bits (you don't have to remove them all, just the big ones to make sure they don't burn when you cook the skewers). Thread about 5 chicken cubes on the skewers (more or less depending on the size of your chicken chunks). You should get about 8 skewers.

Preheat your grill or grill pan (I live in an apartment so I use a grill pan!). When hot, spray with a little bit of olive oil and place the skewers on the grill or in the pan.

Cook on medium high for about 8 minutes, then flip the skewers and cook for another 5-6 minutes. Exact cooking time will depend on the size of the chicken cubes and your equipment. Make sure you don't overcook them because dry chicken is NOT tasty!

Serve with lemon slices, tzatziki and a greek salad on the side.
