Granola Bites {Vegan – Gluten free}
These homemade no-bake granola bites are the perfect pick-me-up whenever you need a little energy boost! They are packed with nutrients from nut butter and granola, easy to make, vegan and gluten-free!
Ingredients
- ½ cup almond butter or your favorite nut butter
- 1 large banana
- 1 teaspoon coconut oil
- 1 teaspoon maple syrup optional
- 1 pinch salt
- 2 ½ cups your favorite granola / 7.5oz / 210 g - see notes
Instructions
-
In a food processor, add almond butter, banana, coconut oil, maple and sea salt. Process until smooth, then add 2 cups granola and pulse until just combined (don't over mix). Chill dough for 30 minutes.
-
Add a handful of granola to a small mixing bowl, crush it well with your hand to break up any big pieces. Once the dough is chilled, use a heaping tablespoon for each bite, rolling between your hands to mold (using slightly wet hands makes it easier!).
-
Add to mixing bowl to coat with granola. Repeat until you have about 20 bites. Chill for at least 30 minutes before serving. Once chilled, store in an air-tight container in the fridge or freezer.
Recipe Notes
Please note that the nutrition facts will vary greatly depending on the granola you're using. If you need to count your calories or macros, make sure to plug the brand you're using into your calories counter.
