    Ingredients

    • ½ cup almond butter or your favorite nut butter
    • 1 large banana
    • 1 teaspoon coconut oil
    • 1 teaspoon maple syrup optional
    • 1 pinch salt
    • 2 ½ cups your favorite granola / 7.5oz / 210 g - see notes

    Instructions

    1. In a food processor, add almond butter, banana, coconut oil, maple and sea salt. Process until smooth, then add 2 cups granola and pulse until just combined (don't over mix). Chill dough for 30 minutes.

    2. Add a handful of granola to a small mixing bowl, crush it well with your hand to break up any big pieces. Once the dough is chilled, use a heaping tablespoon for each bite, rolling between your hands to mold (using slightly wet hands makes it easier!).

    3. Add to mixing bowl to coat with granola. Repeat until you have about 20 bites. Chill for at least 30 minutes before serving. Once chilled, store in an air-tight container in the fridge or freezer.

    Recipe Notes

These are perfect for those mid-afternoon cravings I sometimes get! I will try them with my favorite pumpkin seed butter. Cannot wait to see how they turn out!
