If I listened to Solal, we would be eating potatoes every.single.day. Maybe even twice a day, because there are really a lot of recipes you can make with potatoes before getting sick of them.
Although I'm not sure it would be a good idea health-wise, I do agree that potatoes are pretty damn comforting.
Mashed potatoes, in particular, have a way of warming up your soul and make you feel cozy. I love a good and simple recipe for mashed potatoes but adding goat cheese really takes them to the next level of comfort and yumminess.
Note, that these are slow cooker mashed potatoes, meaning you can just set your timer and forget it.
Depending on your schedule, you can cook the slow cooker mashed potatoes for 4 hours on high or 6 hours on low and then leave them on the "warm" setting until you're ready.
This method of preparing mashed potatoes saves some precious stovetop space if you're planning to make these for the holidays aka. Thanksgiving dinner!
Now, moving away from these slow cooker mashed potatoes recipe, today is our last day in Montreal before we come back at the beginning of December.

Easy Slow Cooker Goats Cheese Mashed Potatoes
Save some precious stovetop space this Thanksgiving by making my slow cooker mashed potatoes. By adding tangy goat cheese, we take this comfort food classic to the next level!
Ingredients
- 5 lbs potatoes 2,3 kg - peeled and cut into chunks
- 4 cloves garlic minced
- 1 cup chicken stock or vegetable stock
- 2 cups milk I used full-fat
- 1 tsp salt
- 6 oz soft goats cheese 170 g, crumbled
Instructions

Place potatoes and garlic in the bowl of your slow-cooker. Pour in chicken stock and milk. Season with salt. Stir.

Close the lid and cook for 4 hours on high, or 6 hours on low.

When ready to eat, mash the potatoes using a masher. Sprinkle with goat cheese and mash again. Stir to make sure the cheese is well distributed. If the texture is too thick to your taste, add more milk as needed.

If you prefer smooth mashed potatoes, transfer the potatoes and liquid to a food processor and pulse until smooth (this is what I did for the batch pictured).

The leftovers will be a bit dry (the potatoes soak up all the liquid). Add a little bit of milk when reheating.

Stovetop space is EVERYTHING during the holiday season and I love that you can just toss all the ingredients into the slow cooker and concentrate on other components of your dinner! Goat cheese is a great way to add some extra creaminess and tang!
