Strawberries are in season and it's driving me crazy! Every time I go to the grocery store I grab two or three pints (sometimes more) because you know how it is.
The strawberry season begins; you think it's going to last for weeks; one day you go to the store and "poof" they have disappeared overnight or are totally overpriced. And your heart is broken.
So yeah, you get it, I want to make the most of strawberry season while it lasts. And what better way to enjoy those sweet summer berries than in a healthy frozen summer treat like these Coconut Berry Popsicles? A popsicles recipe that will make your summer!
I wasn't really sure whether to post this popsicles recipe or not because for most of you, strawberries aren't in season anymore and I didn't want to tease you with that. That would not be very nice of me, would it?
But then I figured it is still hot in some part of the states, and in other parts of the world as well. For these people, it's still time for a frozen summer treat, don't you think?
And anyway it doesn't need to be super hot to eat homemade fruit popsicles, right? Plus, these coconut berry popsicles are so so good! Smooth and creamy thanks to the coconut milk, slightly sweetened with honey and flavored with a touch of coconut flakes.
Mmmm... Now excuse me while I go grab the last homemade popsicle from the freezer 🙂

Coconut Berry Popsicles
Learn how to make popsicles using my easy recipe for Coconut Berry Popsicles - healthy homemade fruit popsicles made with only five ingredients! This popsicles recipe will make your summer!
Ingredients
- 1 lb strawberries roughly chopped
- 1 cup raspberries
- 2 tbsp honey or more to taste
- 2 tbsp coconut flakes
- ½ cup coconut milk I used full fat
Instructions

Combine all the ingredients except coconut milk in the bowl of your food processor. Purée the fruits and gradually pour in the coconut milk. Keep processing until smooth.

Fill this mixture into the popsicle molds and freeze for two to three hours.

It's still very hot here in far West Texas, and we've been out working in the yard. So these popsicles look really good, and I love the combination of ingredients. If I had popsicle molds I'd be making these right now.

You don't necessarily need a popsicle mold to make them. You can use any plastic cups you have on hand! (see this article for an example: http://www.modernparentsmessykids.com/2013/07/how-to-make-popsicles-with-or-without-a-mold.html)

would this work with strawberries and blueberries? Cause that's what I have in my fridge but I'm a little concerned about the blueberry skins???
