Raise your hand if:

  • Every morning you are constantly running around like a crazy person because you’re already so late after hitting that snooze button way too many times (that bed is so comfy though!!)
  • You think life is too short for not having dessert for breakfast BUT you also kinda like fitting into your skinny jeans. Life’s dilemma.
  • The LAST THING you want to do when you wake up in the morning is to cook. But at the same time, you’re so bored with your typical breakfast it’s driving you crazy. You want something yummy and completely effortless.
  • Eating breakfast at your desk is your thing. It’s super convenient and making your colleagues envious is just an added bonus.

Sounds like you? I’ve got just the right thing for you:

Apple pie overnight oats: creamy maple vanilla oatmeal topped with a spiced apple pie filling!

Are you familiar with overnight oats? Here’s how it goes: you put some oats in a jar. You pour some milk on it. Now, shake shake shake (or not). You put it in the fridge. You sleep. TADA, it’s ready!

Now, what’s truly exciting about these apple pie overnight oats is…the spiced apple topping!!

This topping my friends is HU-mazing. Tender apples, simmered in coconut sugar, cardamom, nutmeg, and cinnamon… “OH MY GOD” is probably the best way to describe this breakfast.

It’s like eating an apple pie (because it’s basically apple pie filling!) but without the crust and added nutrition. If Apple Pie Overnight Oats won’t make you want to jump out of bed, I don’t know what will! Enjoy!!

Ingredients

Apple Pie Filling (serves 4)

  • 4 medium baking apples peeled, cored and cut into chunks (see notes)
  • 2 tbsp lemon juice
  • 1/3 cup coconut sugar you can also use brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1/4 tsp nutmeg
  • 1 cup water
  • 1 to 1 1/2 tbsp cornstarch depending on how thick you want the filling to be

Oats (quantity for a single serve!)

  • 1/2 cup oats your favorite kind
  • 1/2 cup almond milk or your favorite kind of milk
  • 1 tsp maple syrup more or less to taste
  • 1/2 tsp vanilla extract

Instructions

  1. Mix apples, lemon juice, sugar, spices and water in a large skillet. Bring water to a boil then reduce to medium-low, cover and cook for 15 minutes, stirring from time to time.

  2. Dissolve cornstarch with about 1/3 cup water and add to the apples. Stir and cook for about 3 minutes or until liquid has thickened. [Some apples are very juicy and some are less, so if you find that there's not enough liquid, add a little bit more water; and if it's too juicy, add a little bit more cornstarch (diluted in water before)].

  3. Transfer to a container, allow to cool and set aside until ready to use. It will keep up to a week in the fridge.

  4. The night before, place 1/2 cup oats in a jar. Mix together milk, maple and vanilla and pour over oats. Stir, close with a lid and store in the fridge overnight. Repeat for more servings.
  5. In the morning, stir oats again. At this point, you can add more milk to taste. Top with 1/4th of apple pie filling per serving. If you like you oats warm, reheat them in the microwave for about one minute. Enjoy!

Recipe Notes

I like to use a mix of different apples for a complex flavor. For this recipe, I used 2 red delicious, 1 royal gala and 1 green smith.

  1. It is nearly 8 pm for me here in South India 🙂 and reading this I feel suddenly pretty hungry (but I try not to eat anything after 7 pm at the latest) – I do love oats every morning so now I just have to cook some apples again 🙂 🙂

  2. Overnight Oats are a meal prepper’s best breakfast buddy! And the combo of creamy maple and vanilla oatmeal with spiced apple compote is a must-try for fall fanatics like me!
