Are you familiar with overnight oats? Here's how it goes: you put some oats in a jar. You pour some milk on it. Now, shake shake shake (or not). You put it in the fridge. You sleep. TADA, it's ready!
Now, what's truly exciting about these apple pie overnight oats is...the spiced apple topping!!
This topping my friends is HU-mazing. Tender apples, simmered in coconut sugar, cardamom, nutmeg, and cinnamon... "OH MY GOD" is probably the best way to describe this breakfast.
It's like eating an apple pie (because it's basically apple pie filling!) but without the crust and added nutrition. If Apple Pie Overnight Oats won't make you want to jump out of bed, I don't know what will! Enjoy!!

Clean Eating Apple Pie Overnight Oats

Ingredients
Apple Pie Filling (serves 4)
- 4 medium baking apples peeled, cored and cut into chunks (see notes)
- 2 tbsp lemon juice
- ⅓ cup coconut sugar you can also use brown sugar
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- ¼ tsp nutmeg
- 1 cup water
- 1 to 1 ½ tbsp cornstarch depending on how thick you want the filling to be
Oats (quantity for a single serve!)
- ½ cup oats your favorite kind
- ½ cup almond milk or your favorite kind of milk
- 1 tsp maple syrup more or less to taste
- ½ tsp vanilla extract
Instructions

Mix apples, lemon juice, sugar, spices and water in a large skillet. Bring water to a boil then reduce to medium-low, cover and cook for 15 minutes, stirring from time to time.

Dissolve cornstarch with about ⅓ cup water and add to the apples. Stir and cook for about 3 minutes or until liquid has thickened. [Some apples are very juicy and some are less, so if you find that there's not enough liquid, add a little bit more water; and if it's too juicy, add a little bit more cornstarch (diluted in water before)].

Transfer to a container, allow to cool and set aside until ready to use. It will keep up to a week in the fridge.

The night before, place ½ cup oats in a jar. Mix together milk, maple and vanilla and pour over oats. Stir, close with a lid and store in the fridge overnight. Repeat for more servings.

In the morning, stir oats again. At this point, you can add more milk to taste. Top with ¼th of apple pie filling per serving. If you like you oats warm, reheat them in the microwave for about one minute. Enjoy!
Recipe Notes
I like to use a mix of different apples for a complex flavor. For this recipe, I used 2 red delicious, 1 royal gala and 1 green smith.
