    Yesterday, I've experienced my first crazy hot Australian summer day. And when I say crazy, I mean CRAZY. It was 110F! I literally felt like a turkey roasting in the oven. Even the evening breeze, that usually freshens up the air, was warm. My primary goal was to find someplace with AC to stay and cool off.

    I must admit I was very tempted to stay far away from the stove and even more from the oven. Obviously, it would have been a heresy to turn it on. BUT the thing is, this Blue Cheese Pasta is really quite something.

    I don't know about you guys, but blue cheese just makes me happy. I love the rounded flavour and rich creaminess of a good blue cheese, especially in a thick creamy sauce paired with pasta.

    Well, I guess this Blue Cheese Pasta recipe was reason enough for turning the heat up a little bit more in the kitchen. And I don't regret it a bit!

    I'm pretty sure you would appreciate this easy comforting pasta dish, too when coming home after a freezing day. Not that I can remember what "cold" and "winter" means anymore, obviously...

    Blue Cheese Pasta

    This easy Blue Cheese Pasta recipe uses only a handful of ingredients and comes together in a snap. The perfect comfort food for a cold winter day to share with family and friends.

    Ingredients

    For the pasta

    • 12 oz linguine or any pasta you like - 2 oz per person-
    • 1 bouillon cube optional

    For the blue cheese sauce

    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 1 ¼ cups skim milk heated
    • ¾ cup blue cheese crumbled (3.5 oz)
    • freshly ground pepper

    Instructions

    1. Cook pasta according to package direction, with a bouillon cube (stock). Drain and set aside.
    2. Melt the butter in a heavy-bottomed saucepan.
    3. Whisk in the flour and cook, whisking constantly, until the paste cooks and bubbles a bit, about 2 minutes. Don't let it brown!
    4. Add the hot milk, continuing to whisk as the sauce thickens. Bring it to a boil.
    5. Add crumbled blue cheese and pepper to taste, lower the heat, and cook, whisking for 2 to 3 minutes more. Remove from heat, pour over pasta and mix well to coat. Serve immediately.

    Recipe Notes

    The leftovers will dry out a bit. Add some milk when reheating them.

      I'm not always the biggest fan of blue cheese but I'll eat anything for a big bowl of pasta. This looks really good!

      Thank you, this was not hard at all. I used to cook pasta with asparagus, portobello mushrooms and a little piece of steak, the missing piece was the blue cheese sauce, now is perfect.

      Late to the party, BUT, I've been making this since you posted. I was a teen and really learning to cook on my own. This was a huge hit for my dad and I (who frequently enjoy eating a good bleu cheese and a crusty baguette for a snack). Thank you for this recipe all these years. It's still my go to pasta for a late night when I'm feeling 'blue'.

This was a huge hit for my dad and I (who frequently enjoy eating a good bleu cheese and a crusty baguette for a snack). This is my go to pasta for late nights when I'm feeling 'blue'.
