Ingredients
- 4 large handfuls of arugula also called rocket salad
- 8 oz fresh mozzarella bocconccini 230 g, the one sold in liquid, sliced, then cut into cubes
- 3 small blood oranges or two large, peeled and chopped - see notes
- ½ ½ pomegranate seeded
- 4 fresh mint sprigs about 2-3 leaves each, roughly chopped
- ½ ½ lemon juiced
- 2 tbsp extra virgin olive oil
- 4 tbsp freshly grated parmesan cheese
- freshly cracked pepper
- sea salt
Instructions
-
Arrange arugula on four plates. Top with mozzarella and oranges. Scatter pomegranate and mint.
-
Drizzle with lemon juice and olive oil. Grate some parmesan on top and season with salt and pepper to taste. Serve immediately.
Recipe Notes
To peel the skin and remove the pith of the oranges (the white membrane) at the same time, use a sharp knife and cut the top and the bottom of each orange. Then follow the curve of the orange and cut the peel + pith, going from top to bottom as close to the flesh as you can.

I'm not sure why but these flavors reminded me of Australia. Maybe because of the combo of mint and pomegranate in a salad? I don't know 🙂
