Healthy Nachos - can it be real? YES, ladies and gentlemen! I don't know about you guys but when it's nacho time in my home, we know that we just gotta surrender to it and go all in. Flavorwise – not calorie-wise. I have had my share of trial and error on the road to nacho nirvana and came up with an AMAZING healthy alternative to restaurant-style nachos! Sweet Potato Nachos with Black Beans - as indulgent and delicious as the classic version but are packed with nourishing veggies and plant-based protein. I want to eat these for every meal!

How awesome do these look, right? Nachos are forever the king of TV snacks and now totally dietitian-approved using homemade sweet potato chips as the base. BRILLIANT! The baked potatoes also make your serving of nachos filling and nutritious! Smoked paprika, chili and garlic powder give the taters an amazing chips flavor, and the melted cheese and Mexican toppings take care of the rest!
What I also love about this recipe is that the nachos are entirely adaptable to taste — use more or less of the spices and top with your favorite salsas, veggies, beans, and cheeses!

How to make healthy Sweet Potato Nachos:
Step 1- Preheat oven to 400F/200C. Slice the sweet potatoes thinly (¼ inch). It’s best to use a mandolin if you have one - it’s much easier, quicker and the slices will the perfectly cut. If you don’t own one, make sure to use a very sharp knife.
Step 2 - Place sweet potato “chips” in a large bowl. Add olive oil, spices and salt. Mix well with your hands to coat all the slices.
Step 3- Spray a large baking dish with a bit of oil and arrange the sweet potatoes on it. Make them overlap a bit because they will shrink while cooking, and we want to have sheet pan covered.
Step 4 - Roast in the oven for about 20 minutes, or until they’re cooked through and a bit crispy on the edge (keep an eye on them to make sure they don’t burn)
Step 5 - Remove from the oven, top with cheddar and then black beans. Return to the oven until the cheese is nicely melted (about 3-4 minutes).
Remove from the oven, top with your favorite toppings and serve immediately. Enjoy!
Topping ideas for healthy nachos:
- fresh cilantro leaves
- red onion, chopped (or spring onions)
- avocado, cubed
- jalapeño, sliced (fresh or canned)
- Salsa or pico de galo
- sweet corn
- guacamole
- refried beans
- mango salsa
- avocado ranch
- Mexican street corn salad
- vegan cashew cream or sour cream
Can I make this recipe vegan?
Absolutely - just use vegan cheese shreds instead of cheese and top with my vegan cashew cream or avocado ranch! SO good!
Tips:
- try to make the chips as similar in thickness as possible to allow for even baking
- this works with regular potatoes too - or make them Asian-style and use purple sweet potatoes and top with peanut sauce and cilantro
- You could make half the recipe for a single size portion and bake them in a skillet or metal pie pan or cake pan
- If you don’t have a mandoline, no worries, you can use a knife.

- ½ teaspoon smoked paprika

- ¼ tsp salt
- 1 ½ cups Cheddar cheese shredded (or Monterrey cheese or vegan cheese shreds)
- 1 cup black beans drained and rinsed
- Toppings choose your favorites
- ⅓ cup cilantro leaves
- ¼ cup red onion chopped (or spring onions)
- ½ avocado cubed
- ⅓ cup jalapeño sliced (fresh or canned)
- Salsa or pico de gallo
